Baked Potato Skins

These are absolutely delicious! Better than any restaurant can make. I made these, along with a salad, as a light dinner. My 2-year-old and 4-year-old loved them. I would definitely make these the next time I have guests over for a casual dinner.

Turkey Pot Pie III

Hearty, home-cooked, comfort meal. Creamy and thick. I used a rotisserie chicken from my deli and shredded it into the filling. I also used a frozen 9-inch pie crust along with a refrigerated roll pie crust for the top. Yum.

Chicken Marsala

I wasn't preparing chicken, but pork chops on the grill and wanted the mushrooms marsala sauce to pour over the chops. I used 3 Tbs. butter, 3 Tbs. olive oil and melted them together. Then I added the mushrooms and some sliced onions to the pan. In a bowl I mixed the recommended marsala wine, sherry, and about a Tbs. of cornstarch and whisked it all together. Then I poured it over the mushrooms and onions, covered it, and let it simmer for about 10 minutes. OH MY GOD, YUM! It thickened up perfectly and I poured this over the pork chops hot off the grill. My husband was without words. We both agreed this was better than any marsala sauce we've had in any restaurant! There were NO leftovers!

Easy Key Lime Pie I

This was delicious! My neighbor brought over a whole bag of key limes so I squeezed them to make about 6 pies. This makes a huge difference in the taste, rather than using key lime juice, but it will work just as well. This is so simple and so delish! Everyone loved it and said it was better than store bought or from a restaurant. I used a store bought graham cracker crust but sprinkled the bottoms of them with crushed toasted pecans before adding the filling. YUM! This is a winner! I found that after 15 minutes it was still a bit "wiggly" so I left it in for a total of about 17 minutes. Perfect! A chocolate crust would be tasty, too.

The Best Clam Sauce

Simple, simple, simple and so good! You can thicken it up a bit with flour or cornstarch, but it doesn't really need it. Grate some fresh parmesan over the top and you're good to go. This is an easy dinner and always a winner.

Famous Chicken Francaise

Better than some restaurants, especially served over angel hair or linguine. I did add a few dashes of white wine, (ok, maybe a bit more than that,:) during simmering and I thickened it with a bit of cornstarch. My husband was very impressed. I served it with a green salad and a nice white wine. So good! Thanks Paula!

Light and Fluffy Spinach Quiche

Amazing! I made this for a neighbor's first wedding anniversary brunch and they became our best friends! They couldn't say enough about it. I used sharp Cheddar cheese to give it some bite and added crumbled bacon to the layers with the rest of the ingredients. Next time, I'll try a pepper jack cheese, one with jalapenos. Ham would be a nice addition as well if bacon is too fattening. I doubled the recipe and made one for my husband and I. We ate it 3 mornings in a row. This is a hit.

Apple Dumplings I

Yummy! I made this for dessert one night for some friends and they raved about it long after it was gone. Instead of peeling, coring, and halving fresh apples, I just bought a can of Comstock apples (you can use the fresh apples or the compote) and you could not tell the difference. It came out incredible. I served it with vanilla bean ice cream. Sweet!

Tortellini Soup I

DELISH! It turned out to be more like a stew than a soup, which was just fine! The sausage gave it really intense flavor and the aroma filled the house. My husband loved it! We had enough for 2 nights plus a light lunch. I served a French Dip sandwich with it on the second night. Very filling and very good!

Italian Spaghetti Sauce with Meatballs

Yum, yum, yum! I like my sauce marinara-style, so this was perfect. I also browned the meatballs before adding them to the sauce. I make alot of it for Sunday night family dinners. My husband loves to take a meatball parmesan sub for lunch the next day, if there's any leftovers! This is a winner.

Awesome Slow Cooker Pot Roast

This is THE best pot roast I've ever had! The gravy was YUMMMMMMY and the pork was incredibly tender. The second time around I added baby carrots, mushrooms, onions, and potatoes to make it more of a meal. I made it for my dad for Father's Day and he had leftovers for a week!

Grilled or Fried Skirt Steak

April's Chicken Fried Rice

This was delicious! I didn't scramble the eggs in a separate skillet. Instead, I scrambled them in with the rice. I also added a lot more soy sauce (low-sodium of course). This would be great with shrimp or just with vegetables for the vegetarian eater. This dish is light on the tummy, not like some restaurant versions!

Alfredo Blue

One word: YUM! I am a big blue cheese fan and I loved this. It was so creamy and wasn't overpowering at all. The tang of the blue cheese was just right. I crumbled more blue cheese on top when I served it.

Grilled Marinated Shrimp

I also substituted ketchup for tomato paste, but just a tip for those of you who don't want to open a can for such a small amount. I open up both ends of the tomato paste can, push the paste all the way out, wrap it in saran wrap and freeze it. When a recipe calls for it, I simply unwrap it from the freezer and slice off the amount needed. It works beautifully. I substituted lime for the lemon and it came out delicious. Grilled it on skewers and threw it on top of a caesar salad with some crusty bread. This is a keeper.

Veggie Quesadillas

These were fabulous! I added onion and used olive oil instead of vegetable oil. My husband didn't think these were going to be sufficient for a meal, but we were stuffed after one! I topped them off with low-fat sour cream, salsa, and fresh guacamole. Ole!

Asian Chicken Noodle Salad

WOW! This dish is delish! I needed it to be especially easy and quick, so I used fully cooked rotisserie chicken from my supermarket deli and cut it up while the noodles and nuts were cooking. Instead of a 1/4 Cup sugar, I only used 2 TBS. and it was just right. I also added about a cup of shredded coleslaw. Adding 1/4 Cup each of sesame and peanut oil, instead of 1/2 Cup vegetable oil, made the dressing very authentic. My husband loved it. I'll be making this again. Thanks! :)
