BBQ Pork for Sandwiches

This was easy and so delicious! My husband and I didn't speak a word to each other during dinner...we were too busy stuffing our faces! I used fresh kaiser rolls from the bakery and topped the sandwiches off with sweet pickles and baked onion rings. Yum!

Creamy Pesto Shrimp

This was magnificent! A very tasty dish. Not for the health conscious or dieters, though (all the heavy cream, butter, and parmesan). I made this for company and there were no leftovers. Everybody raved about it. With all the fat in this dish, better take a walk after the meal.

Veggie Quesadillas

These were fabulous! I added onion and used olive oil instead of vegetable oil. My husband didn't think these were going to be sufficient for a meal, but we were stuffed after one! I topped them off with low-fat sour cream, salsa, and fresh guacamole. Ole!

Coleslaw I

Way too sweet. If I make it again, I'm going to use less sugar. I bought a bag of pre-shredded coleslaw instead of all that chopping, which made it so much easier and quicker. My husband didn't like it.

Alfredo Blue

One word: YUM! I am a big blue cheese fan and I loved this. It was so creamy and wasn't overpowering at all. The tang of the blue cheese was just right. I crumbled more blue cheese on top when I served it.

Beef Stroganoff I

Something is missing from this dish. It was bland and too watery. My husband added parmesan cheese to his serving and that livened it up a bit. I was looking for something thicker with alittle kick to it. I won't make this again.

April's Chicken Fried Rice

This was delicious! I didn't scramble the eggs in a separate skillet. Instead, I scrambled them in with the rice. I also added a lot more soy sauce (low-sodium of course). This would be great with shrimp or just with vegetables for the vegetarian eater. This dish is light on the tummy, not like some restaurant versions!

Quick and Easy Alfredo Sauce

Wow! Creamy, creamy, creamy! I made this twice in one week. The secret really is the cream cheese. A very sensual meal served hot over linguine or fettucine. Pair it with a tangy caesar salad. Be sure not to rush the prep time. Constantly stir and add all of the ingredients alittle at a time. It really makes a difference in the consistency.

Skyline Chili I

Much too watery. I only added half the water it called for and it was still too thin for our taste. I'm used to thick, hearty chili that you can sop up with a nice piece of cornbread. My husband and I poured this over spaghetti and topped it off with sour cream and lots of shredded cheese. We liked the taste, and I'll probably make it again, but will modify the water big time.

Vegetable Chowder

If you like thick chowder, this is it. Very, very good. I used frozen veggies instead of chopping for hours and it was still excellent. Bacon would've been a nice addition and maybe a handful of fresh diced tomatoes to top it off. I'll definitely make this again.

Doris's Shrimp Salad

Way too much mayo and very "blah." Needed a lot of seasoning. I used "lite" mayo and served it on fresh hoagie rolls. I was expecting a Louisiana, kind of po boy sandwich, but my husband and I weren't too crazy about it. I won't make it again.

Chocolate Macaroons I

Sweet, sweet, sweet! I made these in a pinch one late night when my husband and I were craving something sweet. A half gallon of milk and a tummy ache later, we could only eat 2 each. Much better cold. Next time, I'll probably play around with the sugar a bit. I get a toothache just thinking about them!

Asian Chicken Noodle Salad

WOW! This dish is delish! I needed it to be especially easy and quick, so I used fully cooked rotisserie chicken from my supermarket deli and cut it up while the noodles and nuts were cooking. Instead of a 1/4 Cup sugar, I only used 2 TBS. and it was just right. I also added about a cup of shredded coleslaw. Adding 1/4 Cup each of sesame and peanut oil, instead of 1/2 Cup vegetable oil, made the dressing very authentic. My husband loved it. I'll be making this again. Thanks! :)

Awesome Slow Cooker Pot Roast

This is THE best pot roast I've ever had! The gravy was YUMMMMMMY and the pork was incredibly tender. The second time around I added baby carrots, mushrooms, onions, and potatoes to make it more of a meal. I made it for my dad for Father's Day and he had leftovers for a week!

Spinach and Artichoke Dip

I made this 5 minutes before my guests arrived for a party. It came out delicious. I served half of it in a pumpernickel bread bowl and the other half with lime-flavored tortilla chips. It was a hit!
