Ham N Egg Skillet

This was incredibly good, the whole family 'inhaled' it!! After reading the reviews and knowing ours tastes, I made the following changes. I sauteed the potatoes with the onions & green peppers and used a little granulated garlic along with S&P to season, and I used 6 eggs and whisked in a little half & half with them. This is a KEEPER & going into the regular rotation. Thanks for sharing the recipe!

Shepherd's Pie VI

I love this recipe. I read the reviews and the only changes I made to the recipe was adding 2T. Worchestershire sauce to the meat mixture and adding a peeled garlic clove to the potatoes when they were cooking. Oh and I forgot to add the finely minced onion to the mashed potatoes. This is a keeper and is going into the regular menu rotation.

Baked Apple-Pecan Maple Pancakes

Tweeked the recipe a little based on previous reviews. I didn't have any pancake mix so I used a recipe from this website for the mix and made the following changes-Melted the butter in the pie pan while the oven was preheating, used double the apples & diced them, marbled maple syrup into the batter, sprinkled 3-4 T. brown sugar over the melted butter (like pineapple upside down cake) and cooked it around 20 minutes. It wasn't dry or too sweet. My husband said this is a keeper!

Tuna Cashew Casserole

Yummy!! I doubled the recipe but only had 1 can of Cream of Mushroom and 1 can of Cream of Celery 97% fat free so used those. I used all the celery and added sliced carrots and 2green onions. My husband loved it!!

Cola Pork Chops

Good recipe but made a few changes. I needed a lower sugar content so I used half regular ketchup and half low-sugar ketchup, half Coke & half Coke Zero and added about 1-2 tsp Lee & Perrins. My husband loved it & couldn't tell the difference which was what I was after. Definitely a keeper.

Zucchini Pasta Bake

Versatile recipe. I read previous reviews & for this first time making it I used crushed tomatoes along with the fresh tomato called for in the recipe. I also browned a lb of ground chuck with the onions. I am taking care of an elderly parent...she ate it all-not a bite left :-).
