Authentic German Potato Salad

Reviewed: May 1, 2012
I cut back the sugar...added green scallions at the end with the bacon. I don't like peeled potatoes, this potato salad is supposed to be quick and rustic. I even cooked my potatoes in the microwave (stab them with a knife). The same taste as my oma always made.

Spicy African Yam Soup

Reviewed: Jan. 15, 2012
I omitted the zucchini. I "skinned" the garbanzo beans . It takes longer to make this way, but I like not having the translucent skins floating around in my soup.

Farmer's Strata

Reviewed: Feb. 7, 2012
Perfect for any meal. I switched out the onions for green scallions. I did not let it sit overnight. I used fresh Italian bread in big slices for the base...then tore it up with my fingers for the topping. I used baby yukon gold potatoes (microwaved for speed);they are sweet. I browned the potatoes and ham together for extra flavor. I halved the dry mustard, my family is not a fan of mustard in any form. The final custard is moist and well set. Reheats well in the microwave...don't over heat it, it will dry out.

Did almost the same thing...I cut out the bacon...and halved the ham tho. I love the simple texture of bread and custard.

Parmesan and Broccoli Stuffed Potatoes

Reviewed: Apr. 27, 2010
I cut the microwaved potatoes in half and lined the bottom of a buttered cassarole dish. Mixed the steamed veggies with a red pepper roux, layered that on top of the potatoes. Then topped with shredded cheddar, mozz, and parm. OMG! Thanks for the recipe. Took it and ran with it.

Restaurant-Style Potato Salad

Reviewed: Mar. 6, 2010
Very, very tasty...i left the pickle out of the dressing. I tasted the dressing without it and found it sweet already. I cut the mayo with non-fat greek yogurt. 50-50. The dressing tasted like a yogurty sweet mustard. So i put in some more vinegar to balance it. And 6 sliced eggs, we love eggs here...Cheap protein and ooooh so good in a potato salad. I chopped the carrot, small crunchies rather than strings.

Butternut Squash Supreme

Reviewed: May 9, 2009
Definate change...steam the butternut...it is delicate squash that holds its flavor and form better if steamed. I added steamed carrots for a difference in texture...I love adding depth and adding extra veggies does that.

Sweet Corn Tomalito

Had some difficulty with cooking it in the micro... Next time I'll just pop it into the veg steamer or slow cooker. Got fluffy and cooked on edges...soupy in middle. hmm, tastes wonderful tho!

Shrimply Delicious Shrimp Salad

Reviewed: Feb. 23, 2010
Very good. Just like my Mom's. I used frozen, but thawed and put them in a thin cloth and squeezed till no juice came out. Added old bay's and some dill. Other than that, it was exactly the same. Thanks!

Shrimp and Caper Salad

Reviewed: Feb. 23, 2010
Very good take...i lessened the mayo and chopped up the shrimp to get it more bite sized. Capers are juniper berries that have been brined, i used the non-pareil size. Very strong, so i chopped and smashed them with my big knife. Also less vinegar was used. I like my shrimp salad pretty dry.

Chicken Pot Pie VIII

Reviewed: Apr. 22, 2010
Awesome! A recipe that doesn't rely on condensed soup to make the sauce. I sauted the chicken breasts, de glazed the pan and then browned the veggies slightly in the same pan. It adds yummy depth of flavor. I made the roux in the same pan, perfect!
