Black Bean Soup III

This is a good base recipe but I would do several things differently next time. Instead of only saving a small amount of whole beans I would save half of them to give the soup more texture. I added some hot sauce because I like a little more spice. I will also add 1 green & 1 red pepper for color. I added chopped green onions on top and it was very good.

Lentil Soup

This was a very good recipe. I made some changes: I added 2 onions, 4 carrots, 4 stalks of celery, 6 garlic cloves. I doubled all of the spices and added a dash of hot sauce for a little extra flavor. I also tripled the amount of vinegar. I did need to add extra water as the soup cooked otherwise it would have been too thick. Next time I would use vegetable stock in addition to the water. My family & I enjoyed this very much.

Seven Layer Tortilla Pie

This is an excellent dish! I made a few variations along the way: I added extra salsa, garlic cloves, a small white onion (diced) and tomatoes. I shredded two types of cheese between the layers. I seasoned the beans with bit of garlic powder, hot sauce, cayenne pepper, and onion powder for more flavor. This was pretty easy to make and it looked really cool when I sliced it! My family loved it and we ate all of the leftovers too! I will definitely make this again!

Double Tomato Bruschetta

Fantastic and EASY! I made the tomato mixture and marinated it over night and it was very worth the wait! I just added extra diced garlic cloves because my family and I are garlic-lovers. I will be making this again in the near future.

Seven Layer Taco Dip

So simple and so delicious! This dip looks great it was everyone's favorite appetizer. I would only make minor changes: add a layer of diced jalapeno peppers as well as a layer of fresh guacamole. Very good!

Pumpernickel Spinach Dip II

The easiest thing I have ever made, yet it looks so time-consuming! The only thing I did is add a bit of onion salt to the dip and it was fantastic! I will make this for all future parties/holidays.

Spinach Quiche

This came out great! I made a few minor changes: I used fresh spinach and fresh mushrooms instead of frozen. I only had regular feta on hand so I used that instead. This was easy to make and everyone really loved it!

California Grilled Veggie Sandwich

This is such a great recipe! I did not have access to a grill so I roasted the vegetables instead. I added a couple of portobello mushrooms to the mix as well. I served to meal for myself & my sister (we are both vegetarians) and two friends that are both meat-eaters. Everybody LOVED it! No leftovers :)

Zucchini and Potato Bake

This is a fantastic recipe! Very simple yet completely satisfying. I only made small changes: I used 4 cloves of garlic & added garlic powder & onion salt as well. I wasn't sure what to expect but I was pleasantly surprised. I will make this recipe again in the future.

Black Bean Vegetable Soup

Absolutely fabulous! This recipe was simple to prepare and it came out great! I made only slight variations: I used 2 chopped onions and 6 chopped carrots. I used 6 cloves of garlic and went a little bit heavier on the seasoning ( I like a lot of flavor and spice!). I omitted the corn for personal taste. The only thing I would do differently is add more whole beans to make the soup heartier. Next time I will double or even triple the recipe and freeze some for leftovers. This will definitely become a staple in my recipe box!

Mama's Best Broiled Tomato Sandwich

These came out better than expected! My family raved about them! Minor changes: while marinading the tomatoes I added a couple of cloves of garlic as well as salt and pepper. I topped the sandwiches off with fresh basil...very good! Easy!

Homemade Black Bean Veggie Burgers

These burgers were amazing! As a vegetarian they really come in handy and save me tons of money as well. As other reviews have said, they freeze well. This is not too difficult so I recommend this recipe for people just learning how to cook - like me! :)
