Turos Csusza (Pasta with Cottage Cheese)

Pretty good and simple. Wanted an easy one pot dinner, and this worked out great. Would of been fine as is, but to make it a whole meal I added a can of drained diced tomatoes and some frozen peas. Also topped with carmalized onions along with the bacon as suggested by someone else. Just needed a little salt and pepper :)

Peanut Butter Chip Cookies III

Great cookie! Husband LOVED them. The chocolate chips didn't really stick to the dough well when added, but I just stuck the loose ones on the tops which made them prettier anyway. Couldn't really taste the peanut butter.

Baked Teriyaki Chicken

So so good! Even better grilled. One night I didn't have soy sauce...I had already started the sauce so I used Worcester instead. Turned out great, but not really teriyaki-ish. Sauce seems to take forever to thicken, but I learned that it will thicken up the rest of the way as it cooks on the meat.

Blueberry Pie

We had a ton of blueberries in the freezer from my sister-in-law, so I was trying to figure out what to do with them. This pie had great flavor, but even when adding the extra TB of cornstarch was still rather runny. My husband was holding it in his lap while we were riding to a fish fry, and it actually leaked all over his pants (We still served it) Anyway, the pie was gone in 5 minutes! I gave the lattice crust an egg wash and sprinkled with cinnamon sugar. Cooked at 400 for an hour. Do cover the edges with aluminum foil! They will brown way too quick. Luckily caught that before it happened. Will make again but add 5 TB of cornstarch instead.

Ruth's Grandma's Pie Crust

I accidentally modified this recipe. I had cut the recipe in half, and wasn't paying attention to what I was doing and used a 1/3 cup measurer when I was adding the shortening instead of a 1/4 cup. I ended up adding 1 cup and 2 TB of shortening instead of 3/4 cup and 2 TB. Put in some extra flour to make it workable, and it turned out fine. Pie crust was still wonderful, but a little more difficult (completely my fault). Very tender and flaky. Can't wait to use it again, but correctly :)

Grandma's Lemon Meringue Pie

One of my favorite desserts. Very lemony, not too sweet, and just tart enough. Very easy to make. I do make my own pie crust instead of using store bought. Yummy!

Country Green Beans

Husband really liked these. I used 3 slices of bacon to replace the ham (we didn't have any) Cooked the bacon and then removed. Sauteed onions in drippings, then added the rest along with some fresh garlic. Very very good.

Best Bread Machine Bread

I make this about twice a week for our sandwich loafs. Make the dough in the bread machine, but finish it off in the oven. If you do this, cut a slit down the center and allow the dough to rise in bread pan for 40 minutes. I brush with milk and bake at 350 for 30 minutes. Also I put a cake pan filled with water underneath the bread as it bakes. Perfect every time. I've also used the dough to make rolls (was pretty good that way, but much better as loaf)

Sweet Dinner Rolls

Yummy! Very soft and light. I never follow the manufactures settings, and it seems to work for me. Added sugar, water, milk, and yeast. Allowed to proof for 10 minutes. Then melted butter, egg, flour and salt. Rolled into balls and place with sides touching on cookie sheet. AND USE BREAD FLOUR! (Yes! I'm shouting!) It will make a world of difference in the texture. Updated - Yesterday made this into a loaf. Best sandwich bread ever! My husband said to throw the old recipe out. Baked at 350 for 30 minutes for that.

I make a low fat version of this. We use ground turkey, fat free sour cream, and low fat cheeses. I usually cut the recipe in half but double the meat sauce cuz that's how we like it :) and add some extra tomatoes and shredded carrots. Also add sauce to the bottom layer. This is a really great dish to feed a crowd.

Chicken Breasts Pierre

Pretty good. Taste like watered down barbeque chicken. Troy loves this and request it pretty often. Usually add 1/2 diced onion. Sometimes I make with pork, but simmer for only 30 minutes then. Oh and double the sauce. Pretty much always serve with brown rice with sauce spooned over top. Only thing is it's not as good leftover.

Firecracker Fried Chicken Drumsticks

Troy really loved these. Didn't have cornmeal so I just added some breadcrumbs instead. We used Franks Red Hot Sauce. It wasn't spicy, but tasted like hot sauce. Really tender.

Onion Rice

How I usually make rice when I consider it "plain" Chicken broth always makes a world of difference in rice. It's a great method, but wouldn't call it special.

Slow Cooker Chicken and Dumplings

Troy hates it when I make this, but sometimes it's nice to just be lazy. Used reduced sodium cream of celery instead of cream of chicken, and chicken thighs w/ bones. Before adding dough, I remove chicken from bone and shred. Also usually add frozen peas, corn, and TB cornstarch/water at the end. Not anything like my mommas, but it's something to eat.

Chocolate Ganache

I like to use 1 cup of cream and bring it just to a boil over medium high heat before pouring over the chocolate. Depending on what I'm using it for, I'll whisk it really good after pulling it out of the fridge.
