Herb Roasted Pork

Reviewed: Feb. 10, 2010
Amazingly good. I waited until my pork reached 170, and it was so moist.

These were really good, but not the best pancake I've ever made.

Green Chicken Enchilada

Reviewed: Feb. 8, 2010
Awesome! This is a great base recipe. With a few adjustments this goes to super awesome. I made these using "slow cooker carnitas" from this site (with chicken). Also added about 1/2 a cup of sour cream to the sauce. I bought a larger can of sauce for a few adjustments. It's easier to make the tortillas pliable before filling. To do this you can add some sauce to a skillet over medium low heat, and then coat the tortillas in the warm sauce one at a time, adding more sauce as needed. Also I like to add a maybe about a 1/3 cup of sauce to moisten the meat. Yummy!

Creamy Banana-Chocolate Pie

Reviewed: Feb. 8, 2010
Everyone really liked this pie, but the chocolate layer hardened way more than I anticipated. It made it kinda difficult to cut into. I used 2 small bananas just to cover the bottom layer. I wish I had of added more though. Overall, a very easy and yummy pie.

Creole Chicken II

Reviewed: Feb. 5, 2010
Really 4.5. Loved the raisins in this dish! For those of you who didn't have raisins, you've got to at least try it once with it. Didn't change a thing. The chicken was amazingly tender. Served over brown rice with a sweet potato.

Broiler S'mores

Reviewed: Feb. 5, 2010
My mom used to do this when we were kids :) It was my favorite treat. I've made this for the children I babysat, and now I make it for my husband. I alway leave the oven door cracked open because they love to watch the marshmallows plump and brown (even the hubs) Soon I'll make it for my little girl when she's old enough.

Crispy Orange Beef

Reviewed: Feb. 1, 2010
My husband loved me tonight :) Thanks for the awesome recipe! I had to make some changes because I didn't have all the ingredients. I used clementines for the zest and juice. Had to use cider vinegar and ground ginger (3 ts). Still great! I added a bit of hot sauce and sesame oil.

Beef Curry Soup

Reviewed: Jan. 28, 2010
I made the soup this morning to heat up later for dinner. Just now tasted it. Yum! The curry isn't overpowering, but just adds a nice dimension of flavor. I used sweet potatoes instead of white because I'm on this sweet potato kick. Very good! I'm probably going to add some frozen peas to it too tonight for dinner. That's just me though. I add peas to everything :) Oh! and I didn't have beef stock so I subbed that for 1/2 water 1/2 beer combo. I don't feel like that caused the broth to lack any flavor. Just ask my hubby, beef and beer go hand in hand :)

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Jan. 28, 2010
These were great! I used milk with 2 TB of vinegar (sub for buttermilk) instead of soy milk which I never have. I found this recipe to be too salty so I cut back the salt to 1/4 teaspoon. An addition of 1/4 teaspoon of vanilla extract made this perfect! It made a ton of pancakes which is fine b/c I popped in the freezer for a quick breakfast later. Yummy! I also enjoy using this recipe with different fruits...Oh which I doubled.

Brown Sugar Smokies

Reviewed: Jan. 27, 2010
Made these for a party, and they were gone in 10 minutes! I used toothpicks on each individually and left them on when served. That way people could easily grab them. It's not much clean up if you line your sheet with aluminum foil. Definitely will make this recipe again :)

Spicy Oatmeal Cookies

Reviewed: Jan. 26, 2010
These were great cookies! I adjusted somethings for my taste. I used 1 cup of wheat flour and 1/2 cup white, and I used 1/2 brown and 1/2 white sugar. I also doubled the spices, egg, and banana. I felt the dough would need extra moisture b/c of the wheat flour. In half of the cookies I added about 1/2 cup of raisins. Walnuts (If I had some) would have been awesome too. These are going to be a great breakfast cookie. I'm also wondering how it would be with carrot puree added. May try that next.

This was really good. I used chicken thighs and baked at 375 for about 45 minutes. (It's cold outside) Will definitely make again, but I might add a little more mustard.

This is some serious salad dressing! We liked it, but I would be scared to give it to guests because it has some major kick.

Simple Whole Wheat Bread

Reviewed: Jan. 17, 2010
Good! I halved the recipe and used one loaf pan. Also used my bread machine to make the dough and finished in the oven. I just add liquid, yeast, and honey to proof, and then added butter and lastly dry. Came out great! Next time might try 1/2 milk and 1/2 water. Thanks!

Banana Pancakes I

Reviewed: Jan. 17, 2010
These were great and so easy! My one year old cleared her tray! And my husband ate it! (He hates pancakes) I sprinkled some chocolate chips on while they were cooking. Yummy! Next time I might not add the sugar and use part wheat flour. Make it a little healthier :)

Sweet and Sassy Hash Browns

Reviewed: Dec. 19, 2009
Even though I reduced the heat to medium when leaving it to sit, it began to burn after a minute. I can't imagine what would be left after 5 minutes on medium high heat. Also way too much sugar!!! I think this could have potential to be good, but as is - !
