Todd's Famous Blueberry Pancakes
This recipe made a much denser pancake than I prefer. I think it's the additional 1/4 cup of flour. Without that and a dash of vanilla, I think this would be a much better recipe. Also subbing buttermilk (plus 1/2 baking soda) would take this over the top. Won't make this as written again.

Chicken Florentine Casserole
I get so many compliments when I make this. I modify it slightly, but you really don't have to. I usually use left over fried chicken breast that I cube. I fry up around 5 strips of bacon, and then make the sauce with the bacon grease adding maybe a tbs of butter instead of a 1/4 cup. Some cream cheese goes into that because at this point we're not counting calories :) Instead of parmesan I just use one of those bags of shredded italian cheese for both the sauce and topping. One box of frozen spinach is all I add, and I omit the mushrooms (I'm the only one who eats them). No layering, just mix it all together. Eat, run 5 miles, then have a heart attack. Totally worth it!

Grandmother's Buttermilk Cornbread
Wow! I've always made Jiffy like my mom, but no more!!! This was super easy and amazing. Here's a buttermilk tip for those like me who never have it. 1 TB of vinegar and add milk to make a cup. Let it sit for a while til in curdles. Also I microwaved my butter in my mixing bowl instead of using the stove.
