Hummus-Stuffed Portobello Caps

Disclaimer: I did not have the exact ingredients to make as stated, but the entire concept is excellent and easy to tweak based on preferences and what's on hand! I used 1/4 c whipped cream cheese, 1/2 c original hummus, garlic and crushed red pepper to taste. Never would have thought to use hummus...sooo good!

Avocado and Tomato Salad

This simple recipe rocks! It never occurred to me that balsamic vinegar on avocados would be so tasty. I just made one serving, so a couple of tomatoes, half an avocado, and a drizzling of the dressing was sufficient (not a fan of onions). Fabulous!

Seattle Cream Cheese Dogs

I was looking for a way to cover the unusual taste of veggie dogs, and this is certainly a winner! I never would have dreamed of putting cream cheese on a hot dog, let alone topping it with sauerkraut. But I have to say this is my absolute new favorite way to eat them! (I did leave off the onions because I'm not a fan.) Thanks for sharing!

Vegetarian Chickpea Sandwich Filling

Very good! I never would have come up with this, but plan on making it regularly. I left out the celery and served it on pita with tomatoes, spinach leaves, and avocado. Delish!

Hot Fudge Ice Cream Bar Dessert

So easy and delicious that I want to go finish the pan right now! All the kids and adults loved it. The only big change I made was to use an 8x8 pan and as many sandwiches as it held. But I didn't decrease the toppings at all, so it's fabulous and rich!

Strawberry Avocado Salad

This is surprisingly delicious! I wouldn't have thought to put this together but will be making it often. I did omit both the sugar (based on other suggestions) and pecans (based on personal preference). The dressing was plenty sweet and fabulous!

Lemon Pasta Sauce

Great sauce, although next time I'll have to measure the lemon juice because it could have used more. (I just squeezed a lemon, but it may not have been enough) I also added mushrooms, asparagus, salt and pepper. Everyone ate it up!

Spinach and Feta Pita Bake

Fantastic taste, aroma, and appearance! I only had regular pesto but would love to try it with sun-dried tomato pesto. My only problem was trying to keep the toppings on while I cut and ate it!

Pasta with Gorgonzola and Sweet Onion

Fantastic taste and quick to throw together (partly because we don't do onions). I used the same amount of sauce and only as much pasta as we needed. I also added mushrooms and spinach but could see a lot of other options would be good and change it up.

Annie's Fruit Salsa and Cinnamon Chips

This salsa is outstanding! I've had one before and went searching for the recipe, and this is a great one. I didn't have raspberries but had a couple of nectarines that needed used, so I substituted them. The result was better than I could have imagined. It tasted wonderful and really rounded out the color! I also used apricot preserves. I can't imagine docking this recipe stars because of the labor...anything that calls for this much chopping is obviously going to take a little time! I always make up the time by buying my cinnamon pita chips but will definitely try making these tortillas next time.

Deep-Dish Blackberry Pie

I want to eat the WHOLE thing myself! I was lazy and used a ready made crust on top which probably didn't let enough juice escape and made mine runnier than a lattice would be, but I was lazy and short on time. Still an excellent, easy filling!

Eggplant Tomato Bake

A really good experience for my first time making an eggplant dish. My only changes were to omit the flour for frying, used olive oil, baked with the pasta as the bottom layer, and topped with mozzarella. Loved it!

Mushrooms with a Soy Sauce Glaze

Since I'm vegetarian, I opted for these over brown rice instead of steak. EXCELLENT! I liked the simple, yummy sauce so well that I sauteed some asparagus the same way and it also rocked!

Cherry Tomato Salad

FABULOUS! The pine nuts are imperative and really make the salad. I had to sub balsamic for red wine vinegar because that's all I had, but will try the red wine next time. Also, I will definitely reduce the oil considerably as suggested and maybe add the feta on top just to try it out. Very good though!

Rhubarb and Strawberry Pie

So glad to have a recipe to make at home! I made my pie at night and didn't eat it until morning (literally, for breakfast!) and it wasn't at all runny. I had mixed the filling and let it sit for 30 min before assembling my pie. However, in my haste to add the top and cook it, I completely forgot to dot inside with butter. Don't know how much flavor that adds, but it was really good without (and much lower in calories I'm sure!) Used a full crust top with big vent holes, glazed with milk, sprinkled with sugar and nutmeg, covered the edges for 15 @ 425, then uncovered for 45 @ 375 and let sit in the oven once it was off for another 15 as suggested by others. Very happy with this pie!

Hot Corn Dip

This was a hit at the party--everyone devoured it! I changed the diced tomatoes to salsa and topped it with shredded cheese, baking an additional 10 min to melt. It was really wonderful!
