Tacos in Pasta Shells

I'm giving this 4 stars based on the concept. I changed some things to add flavor because I knew it would be too bland for us as is. I used 4 oz cream cheese and added 1 tsp each of oregano, cumin and cayenne to the chili powder. I also replaced the taco sauce with salsa, slightly covering the bottom of the pan as well to prevent drying and sticking. I omitted the crumbled chips. Next time I will also add refried beans and olives. It was really good with the kicked up flavor!

Alicia's Italian Nachos

I am rating this recipe as a great idea because I did not even try to make it as is. The marinara/pizza sauce did not sound appealing--too much like pizza. So I baked the pitas (with olive oil, italian seasoning and parm on them), covered them in some pesto and black olives, melted italian cheese on top, sprinkled with more parm and thoroughly enjoyed! I would rate that 5 stars!

Cheesecake Chewies

I'm rating these 4 stars because of the way the recipe is written. I've been making these with the same ingredients in different amounts for years with excellent results. The bottom layer should only have 1 egg and end with a very thick consistency. You should not be able to pour it. It has to be spread into the pan. The top layer should have no butter in it, which is probably contributing to the burning. Bake at 350 for 20-25 minutes, then start checking it. Depending on your oven, it will only take 25-30 minutes and will not look "done" when you take it out. These set up considerably after sitting! If you let them bake until they appear done, then you've probably already ruined them.

Mashed Potato Tacos

This is great for what it is...a quick, easy meal. I don't know what others were expecting, but I was pleasantly surprised. I did add extra cheese and some taco seasoning to boost the flavor. I think it would even be good with some sauteed spinach to add some nutritional value!

Rhubarb and Strawberry Pie

So glad to have a recipe to make at home! I made my pie at night and didn't eat it until morning (literally, for breakfast!) and it wasn't at all runny. I had mixed the filling and let it sit for 30 min before assembling my pie. However, in my haste to add the top and cook it, I completely forgot to dot inside with butter. Don't know how much flavor that adds, but it was really good without (and much lower in calories I'm sure!) Used a full crust top with big vent holes, glazed with milk, sprinkled with sugar and nutmeg, covered the edges for 15 @ 425, then uncovered for 45 @ 375 and let sit in the oven once it was off for another 15 as suggested by others. Very happy with this pie!

Grilled Veggie-Portobello Mushroom Burgers

This was alright, but I wouldn't call it spectacular. I wasn't a huge fan of the bleu cheese...maybe it would be better with something else? I will try it again though, just to be sure!

Dill Wrapped Cream Cheese

I made the individually wrapped version but thought they were kind of bland. Maybe I need to seriously up the dill or use a different spice altogether. If I make them again, I will definitely use regular cream cheese. I used fat-free and it wasn't as gooey, melty inside as I would have liked.

Thai Peanut Noodle Stir-Fry

Love the concept and as written (minus the sake) was good; however, it was a little on the sweet side for me and not that spicy. So next time I'll play around with those aspects and get a 5 star recipe out of it! On the bright side, my 5 yr old did actually willingly eat a few bites without complaint!

Chickpea Salad

This is really good--even my 2 yr old was begging for my bites! I agree that as written there would be WAY too much vinegar. I took the advice of another to use equal parts red wine vinegar and balsamic totaling 1/4 c which was still more than sufficient. Next time I'll try adding some feta.

Green Pepper Tomato Salad

I've had vinegar/sugar marinades on veggies before, but this was sooo good! I don't know if it was the cider vinegar instead of white or the combo of veggies used (I omitted the onion and used 3 colors of peppers) or maybe I was just really hungry, but wow! Definitely will become a staple recipe for me!

Yummy little things! A bit harder to make than I was expecting...there was a lot of tortilla tearing, but worth it! The longer they are refrigerated, the soggier they become, so I wouldn't make them too far in advance.

Zucchini Cakes

These are a great idea! I reduced the recipe to the amount of shredded zucchini that I had (about 2 c) but followed the recipe otherwise. Even with less to work with, there was way more than 5 cakes! And they fry up better and stick together better as smaller cakes anyway. I salted them before serving, which I do with crab cakes too. I will increase the Old Bay next time and look for a good sauce for them, but they're a great recipe to have on hand!

Zucchini Bars

If I hadn't totally messed this up, it'd be great--although definitely more cake-like than bar. I drained the zucchini, but apparently that wasn't enough. My middle would NOT set up, so I'll definitely squeeze the zucchini next time. I also took the advice of others and reduced the butter in the icing (to 1/3 c) and powdered sugar to half (1 1/4 c) and increased the cream cheese to 4 oz. I thought it was great and can see how it would be too buttery and sweet as written. It was terrific and hopefully I'll get it right next time!

Raspberry Chocolate Smoothie

This is really good, but I agree that it's a little sour as written. To adjust it, I simply used the other banana half with another scoop of chocolate and a splash more chocolate soy milk as needed. Next time I'm going to try it with strawberries instead of raspberries. I think that will make it 5 stars!

Pumpkin Zucchini Bread/ Cake

My 4 y.o. and I loved it! I tweaked it based on our preferences--1.5 c whole wheat flour, 1.5 c oat flour, 1 c coconut sugar, 1/2 c honey, 1/2 c applesauce, 1/4 c coconut oil, and no nuts. I made a dozen cupcakes and sprinkled some chocolate chips on top. I baked them for 25 min but they could have stayed in another 2-3 min. The loaf took an hour.

Raw Vegetable Salad

This is a good recipe, I had to reduce the mayo to 1 cup so it wasn't swimming in it and sugar down to 1 Tbs because I couldn't imagine it being any sweeter with the other flavors. Also, if I make it again, I'll chop the broccoli and cauliflower much smaller--almost to crumbles--because the leftover peas, peanuts and cranberries at the bottom of my bowl were the best part without having to navigate good size, crunchy pieces of veggies. Or maybe I'll even try it without as a pea salad!
