Gingerbread Cookie Mix in a Jar

As is, this recipe does NOT fit in a quart sized jar. There are more than 4.5 C's of ingredients to fit into a 4 C jar, sadly, I didn't realize that until it was too late. My pretty gift-jars come with an extra baggie of 1/2 C flour/spice mixture! So, adjust the recipe/servings accordingly. I baked them first to see if they were yummy and, with the other reviewers suggestions they were! Soft and chewy, the way I like my gingerbread. Adjustments made: -halved all spices except cinnamon -added 1 TBSP of vinegar

Baked Salmon II

Holy Cow, was this a great recipe!!! I played pretty loose with the specifics per other reviewers suggestions, but it was the easiest and yummiest dinner I have made in... well, maybe forever! I upped the garlic a little, reduced the oil to approx 2 TBSP, upped the Lemon Juice to 4-6 TBSP (just poured until it looked right), added dill and broiled it for about 8 min per side, turning and flipping frequently to prevent burning. Then, as suggested I took what was left of the sauce in the glass pan and added it to brown rice and served the Salmon on that. Magnificent!!! I will definitely be making this again soon, and for company!!!

Italian Style Meatloaf I

LOVE IT! I use ground turkey, and split the recipe between two loaf pans. We have a small family so we eat one, and I freeze the other. Freezes and reheats great!

Slow Cooker Cranberry Pork

Mom's Zucchini Bread

Delicious! Super moist! One of the only veggies the kids will eat! I replace half or sometimes all of the oil with applesauce, up the zucc by half, up the cinnamon and add nutmeg to taste. Love it!

Great idea. Easy to make and a fun way to serve fruit at a picnic or bbq. I would not include bananas, as they turn brown by the time you arrive at the event.

Creamy Bow Tie Pasta Salad with Prosciutto, Peas, Grapes, and Dried Cranberries

Delicious! I made this for my husband and his parents for his birthday picnic. It worked perfectly, tasted great and wasn't that difficult to make. I did not cook the prosciutto, because we love the flavor it already has. Might as well use (much cheaper) bacon if you're going to fry it up. It was great with the prosciutto as is. In the future, I'd up the grapes, and decrease the peas a little as there were a bunch left over at the end. Thanks for a keeper!

Baked Garlic Parmesan Chicken

Great! A super-easy weeknight dinner recipe. I cut the breasts into half width to decrease cooking time. There's more breading/chicken that way too, which is nice. I substituted olive oil for the butter, added garlic powder and Italian Seasoning to the breadcrumbs and just a little grated parmesan cheese. I baked them on a cooling rack, over a pan to catch the crumbs, but did not turn half way through. The bottoms were not as crisp as the top, so I might do that next time, waiting to add the extra crumb/oil mixture until the cutlets are flipped. Thanks!
