Pumpkin Corn Bread

I made these and added cinnamon, nutmeg, ginger, cloves, cardamon and allspice. Absolutely awesome!!!!! Thank goodness I made 3 batches so I could use up 2 cans of pumpkin.

I followed the instructions exactly except I added more spice 1t cinnamon, 1/4 t each of ginger, nutmeg & cloves and it tastes just like pumpkin pie ! So yummy!

Buttermilk Corn Bread

FLAWLESS!!!! I do not have an iron pan so I used what I had. I generously greased wax paper and had to bake it longer, however; it did try several varieties!1. Added Bacon, 2. Italian spices with Parmesan cheese, 3. Jalapenos with Mexican spices and salsa & 4. Sugar & cinnamon. The plain version was higher but the others were very good also! Bake on!

Grandma's Famous Salmon Cakes

I changed this one around a bit. I used a 10 oz can of salmon (because that what I had) and 1 egg. Added fresh chopped green pepper, old bay seasoning and sprinkled some corn meal then mixed and sprinkled some more until batter stuck together. Baked @ 425 until light brown. It browned on both sides too.

Baked Tortilla Chips

I used the 6" corn tortillas, cut them into quarters and baked them about 25 minutes for them to turn out crunchy. I also but meat and cheese on them and baked them for about 5 minutes more so that the cheese would melt. I served them with homemade guacamole and salsa too. They are great because the don't break like the store bought chips do. Some were browned but, they were all delicious! Oh my god we are so full!
