Tofu Creamed Spinach
I was a little scared of this dish because I had never had tofu before. This dish was incredible. I will definitely make it again. I think this tasted better than Boston Market's creamed spinach! Thank you for a great recipe! I can also see this used on pizza or lasagna like some of the other comments had said. Yummy!

Pasta e Fagioli a la Chez Ivano
This was so easy to make and was wonderful. Even though I didn't let the soup cook as long as specified (I was in a hurry), it was amazing. I chose to use fresh garlic, and probably didn't add enough, I would have liked a little more garlicky punch. Served with homemade garlic toast, my family loved it. Instead of using two cans of red kidneys, I threw one can of cannelini beans in and for the pasta, I used the tiny shell pasta. It looked so pretty. I also tried cutting the fat by using lean ground turkey, and I think it was just fine. Thank you Ivan for a great recipe!

Gorgonzola Salad
This salad is so easy and delicious! It has become one of my go-to recipes for a quick salad. I definitely use more gorgonzola than called for (cuz it's my fave!!), and throw in sun dried tomatoes (non oil packed), pine nuts and artichoke hearts. Yum!!
