I find it strange how many people use canned mushrooms in recipes.  I don't know about you but IMHO, canned mushrooms don't even come close to fresh.  Not only is there absolutely no taste, but their texture is rubbery.  As well, does one really believe they are convenient when all you have… MORE

Being a single mother at a very young age along with pinching pennies, I learned how to cook pretty quick. I am now 55 years old and have been disabled for over 10 years, but my love of cooking is endless.
My favorite things to cook
One pot casseroles, crock pot dishes, homemade soups, cookies, muffins, Italian dishes, stir-fries, comfort foods. Why bother - I pretty much enjoy cooking/baking anything.
My favorite family cooking traditions
Meatloaf, roast chicken, beef and pork with all the trimmings, including yorkshire smothered in homemade gravy.
My cooking triumphs
It has taken many attempts but I've finally mastered pastry.
My cooking tragedies
Anything that requires the broiler as I have a tendency to walk away from the oven (now I set a timer to remind me to check the oven). As well, I have been working on baking bread however I do cheat with a bread machine, using only the dough cycle and then shape and bake. I am still trying many different bread recipes and have a few in my "Favorites" bookmark folder. If your bread machine was collecting dust like mine, consider pulling it out and giving it a try. You would be amazed how much cheaper it is to make your own bread!

Health Nut Blueberry Muffins
My rating does not relate to this recipe (apologies but the rating applies to the attached article that I found extremely helpful and interesting, especially for those of us who often make ingredient substitutions). I am about to make this recipe, as soon as my refrigerated ingredients come to room temperature, so I rate this recipe as soon as I've tasted these healthy muffins. I hope you enjoy the article! UPDATE: I always try to follow a recipe as written the first time I try it. Although they were moist, which I was very happy about, I did find them a little bland and they were lacking in sweetness (and I don't like a lot of sweetness in my desserts). To remedy this, I made a glaze with 1 cup of powdered sugar, a pinch of salt and about a 1/4 cup of maple syrup or so to get to a spreadable consistency. I think the next time I will also add some cinnamon and increase vanilla and perhaps add some honey as I would prefer my muffins without a glaze. Therefore, I'm sorry but I have to rate this as noted. I will make this again but with some modifications as it is a moist muffin.

Greek Pasta Salad I
I used cucs, cherry tom, red onion, olives and feta (more along the lines of an authentic Greek salad, and also added sliced cooked chicken. Hubby and I both enjoyed it.

Absolutely Fabulous Greek/House Dressing
Many reviews suggested adding a bit of balsamic vinegar. 1st time I made it I followed recipe & we liked it. I did add a wedge of squeezed lemon juice.
