Slow Cooker Chicken Marrakesh

Made this last night and it was wonderful. I doubled the spices and adds a bit more sweet potato and carrot and it was great. Husband, who never comments on anything unless asked, volunteered that he liked it. I used half thighs and half breast meat. Next time I will only use thighs. The breast was a bit dry, even after cooking for only about 3.5 hours. Served with brown rice.

Bourbon Glazed Carrots

Made these for Easter. At very end, just before I poured hot glaze over the carrots I added about 1/4 tsp of fresh grated ginger. After pouring over carrots I added some fine black pepper and a little salt. It was wonderful!! A new favorite way to cook carrots and SO easy. ( I used bagged baby carrots- I had a lot since they are so much cheaper at warehouse clubs in large quantities!)

General Robert E. Lee Cake II

Delicious cake and icing. Definitely a bit labor intensive. Make sure not to overbeat the egg whites or the cake will fall in the center as it cools. I also had trouble with the lemon curd. I was expecting it to thicken, like pudding as I was cooking it. It never did, as a consequence I over cooked it and it ended up more like lemon jelly, rather than curd -still tart and delicious, bit not the right consistency. Looking at other recipes perhaps a better stopping point is until it coats the back of a wooden spoon. The frosting is delicious; the combination of orange, lemon and coconut was perfect for this cake. I will definitely make this cake again, a bit wiser for the experience.

Seven Layer Tortilla Pie

I spiced it up with taco seasoning and hot salsa, reduced the calories with low fat mexican cheese and low fat sour cream and cut the carbs with low carb tortillas. Now it is South Beach and WW friendly.

Lew's Famous Lobster Pot Pie

Made this last night and it was fantastic. Lobsters are relatively cheap this year and I was able to get some on sale. Added sherry to the sauce and used half and half instead of milk. Talk about decadent! My husband, who never comments about anything was asking if I could make it again when our daughter comes home for Thanksgiving. Would also be great served in puff pastry !

Spicy Peach Chutney

Really good. Hubby brought back 2 pecks peaches from his trip to SC that were delicious but too many to eat. Made this and modified the recipe slightly to accommodate a low sugar need. Used 2 cups of splenda/brown sugar mix in place of all brown sugar. Also had a bag of dried tart cherries in pantry didn't know what to do with so I added them. This turned out soooo good. I ended up with 9- half pints. I used 4 lbs of sliced peaches, not 4 pounds of peaches sliced. Could be the difference. Next time I might add some dried apricot - he's in S. Carolina again and it's still peach season!!

Three Bean Salad

Very good, easy to make and healthy. I make it diabetic friendly by substituting a little less than 1/2 cup of Splenda for the sugar ( we like it on the tart side). I also use cider vinegar or red wine vinegar in place of the white. Also a dash of garlic powder.

Swiss Chard with Pinto Beans and Goat Cheese

Really delicious. I was skeptical about how this would taste but my entire family enjoyed it very much. I didn't have any garlic on hand so i substituted a small shallot. It was great.

Lemon Poppy Seed Amish Friendship Bread

I'm diabetic and watching my carbs. I used sugar-free pudding mix and substituted 1 cup of white whole wheat flour. When I tasted the batter before adding in sweetener it was already pretty sweet so I didn't use any additional sugar/splenda. It came out great and I can eat a piece with much less guilt.

Red Pepper Soup

Love this soup as a base I can dress up. I added a little dill, a little cider vinegar and a dash of splenda to make a great low-carb soup. Didn't peel the peppers- just used my immersion blender and probably upped the fiber content a bit. My husband can't get enough of this. And boy does it taste great the next day. Just like stuffed peppers without the filling.
