Slow Cooker Chicken Marrakesh
Made this last night and it was wonderful. I doubled the spices and adds a bit more sweet potato and carrot and it was great. Husband, who never comments on anything unless asked, volunteered that he liked it. I used half thighs and half breast meat. Next time I will only use thighs. The breast was a bit dry, even after cooking for only about 3.5 hours. Served with brown rice.

Bourbon Glazed Carrots
Made these for Easter. At very end, just before I poured hot glaze over the carrots I added about 1/4 tsp of fresh grated ginger. After pouring over carrots I added some fine black pepper and a little salt. It was wonderful!! A new favorite way to cook carrots and SO easy. ( I used bagged baby carrots- I had a lot since they are so much cheaper at warehouse clubs in large quantities!)

General Robert E. Lee Cake II
Delicious cake and icing. Definitely a bit labor intensive. Make sure not to overbeat the egg whites or the cake will fall in the center as it cools. I also had trouble with the lemon curd. I was expecting it to thicken, like pudding as I was cooking it. It never did, as a consequence I over cooked it and it ended up more like lemon jelly, rather than curd -still tart and delicious, bit not the right consistency. Looking at other recipes perhaps a better stopping point is until it coats the back of a wooden spoon. The frosting is delicious; the combination of orange, lemon and coconut was perfect for this cake. I will definitely make this cake again, a bit wiser for the experience.
