Delicious Pumpkin Bread

Soo good. This is the first time I've ever baked anything that didn't come out of a box. I made the low fat version with half apple sauce and half oil. I also added chocolate chips. Yummy! So good heated up!

Terry's Texas Pinto Beans

These were delicious! I read over all the reviews and made some additions. I did everything that was in the original recipe; it was just enhanced. I rinsed and soaked the beans overnight. I added 2 pieces of turkey bacon and a little liquid smoke and chili powder. I did need to add some water during cooking. I added a can of Rotel tomatoes and chilis towards the end of cooking along with some cilantro. It tasted a lot like the chara beans I get at Tex/Mex restaurants that I love!

Roasted Pork Loin

Delicious! I had a 4.5 lb. pork loin that I cut in thirds and browned on all sides. Made the paste with a full bulb of garlic of approx. 12 cloves of varying sizes and fresh rosemary. Probably more than most people would like, but it turned out delicous to me. I put potatoes, carrots, and onions at the bottom of the crock pot and put the roasts on top to marinate overnight. The only problem was the carrots and onions were very mushy after a few hours in the crock pot. I'm guessing from mixing with the olive oil overnight. (I'm still kind of a cooking novice.) Next time I will add those later. Added cut up baby bellas, white wine, chicken broth, and corn starch for a delicious gravy. The roasts turned out very moist and delicious.
