Paleo Spaghetti Pie (Grain, Gluten, and Dairy Free)

This is a really flavorful alternative to your standard spaghetti. If you're not actually following a paleo diet, 4 oz or so of fresh Parmesan cheese sprinkled on top before baking really adds a nice flavor to it. I use fresh basil and about 2 cups of baby spinach. We also usually only have regular ground turkey on hand so I just add oregano and some crushed red pepper to it instead of buying sausage. The only other change I make is to cook the red pepper with the turkey and onion while it's in the skillet, rather than adding it later.

Roasted Red Bell Pepper Soup

I've made this a few times now and I think I like it best tweaked just a tad. It's very good as is (the 4 star rating is my rating of the recipe as written.) As much as we loves beans, it just seems too gritty to us even after blending it up really well and then also simmering it down. I use only 1 can of beans, about 3 cups of water and 2 chicken bullion cubes. 3 very large bell peppers is fine, but 4 is best in my opinion. Onion and garlic the same as the recipe calls for. I also add a big dollop (maybe 3 tablespoons) of reduced fat sour cream at the end. I think its a lot creamier only using 1 can of beans and the sour cream, and it doesn't add a ton of calories if you only use a little. We top each bowl with a little fat free sun-dried tomato feta and freshly grated parmesan if we have it.

Sour Cream Biscuits

We thought these were a bit strange tasting. I followed the recipe to a "T" and the taste of soda in them was very noticeable to us. They weren't terrible, and they were very easy, but I don't think I'll be making this one again. Glad we tried it, though, and thanks for sharing :)

Quick Chili I

Very good chili. I usually don't review recipes when I mess with the ingredients, but my changes to this one were minimal. I omitted the 8 oz. can of sauce and instead added a 14.5 oz. can of stewed. My 3 cans of diced tomatoes were Fire Roasted, w/ green chilis, and w/ green pepper onion and celery. I couldn't see using an Italian style tomato in a chili recipe...but I'm sure it would have turned out fine anyway. I used 1-1/2 lbs. ground beef because that's all I had and I seasoned to taste, rather than with exact amounts. It turned out very well, though mine is probably a bit more watery than if I would have used the 8 oz. of tomato sauce. I cooked this on low for about an hour and a half to cook the tomatoes down. Thanks for sharing!

Cauliflower-Cheese Soup

This was really very good. My meat n' potatoes boyfriend liked it even better than I did! I feel like it's missing something, but I can't put my finger on just what it is. I added some fresh garlic and some salt & pepper but other than that I didn't make any changes and it turned out good.

Creamy Macaroni and Cheese

This was very good. Was especially creamy when piping hot but after cooling on the plate a little, it thickened and got a bit gritty. I did follow other's advice and used a softer cheese (monterrey jack) for half of the cheese, but it still got a bit gritty. I think next time I will use only softer cheeses. I will make again.

Zesty Potato Soup

This was very good. I opted to cut up about a cup of regular onion and cooked it with the potatoes. I also used 2 cloves of garlic and probably more like 2 cups of milk. The cheese I had on hand was a hodge podge of small peices of different kinds; gouda, monterey jack, american. It really turned out great. I served it with garlic cheese biscuits.

Grilled Peanut Chicken

I really wanted to like this....but even with all of the strong/flavorful ingredients, I found this to be so tasteless. It just seemed like I spread some peanut butter on a peice of chicken and called it a day. I may try this again but not without some serious tweaking. Thanks anyway :)

Chicken Vegetable Medley

Good recipe, great with penne pasta, too. I used a green and a yellow bell pepper. The only thing I would recommend is to not add the tomatoes right away, they cook down to a sauce after 10 min. I added them near the end of the cooking time and they kept their texture nicely.

Easy Never Forgotten Guacamole

I love cream cheese, but it's in no way an ingrediant of authentic guacamole. I did try this though...in a smaller amount, and it was good.
