Russian Pancakes - Blini

I had Blini for the first time in Irkutsk Russia, from that point on I was hooked. I asked Mama Rita ( lady who ran the B&B) for the recipe,which I lost along my travels. I must say that this is the closest thing to the recipe that she gave me. I used a little less milk and it came out great. Dont worry that it looks too liquidy. It will come together when you our it into the hot pan. When Its done I butter it and fold them in 1/4's

Lemon Rosemary Salmon

made this for a lunch party, placed the salmon in a baking platter, added the rosemary and lime (didnt have lemons) sprinkled salt and black pepper on top as well as olive oil. Realised that I had some remaining white wine so I sprinkled some on top too. Baked for 15 mins at 350F. and the salmon came out perfect! I got rave reviews, and it was the first item to finish!

Homemade Fresh Pumpkin Pie

this is a great recipe, I was craving anyting pumpkin and tried this recipe out and WOW! it blew me away. i had my 2 slices and then gave the rest away as I had to get back on my diet.

Chicken Pot Pie IX

OMG! Every Christmas my husband makes me prepare his Moms recipe for pot pie, but this year I changed it as I find her recipe too acidic ( tomato sauce base). Boy was he pleased! I had to make it again for him on New years eve as he didn't get enough on christmas day. I used some users suggestions and marinated the chicken with chives, onion, and other herbs. I did use her pastry recipe though. as its better than any store bought. 225g flour,1/2 tsp salt 30g cold butter, 30g cold shortening, 80ml cold milk. - cut the butter, shortening into flour add milk and knead till soft. Fold into 1/3rds and chill 30 mins (3 times) wont be going back to her recipe from now on.

French Onion Soup Gratinee

Oh boy!!! I made this for my Hubby for Old years night and he was raving about this for the rest of the week. It is better than any Gratinee I've had at fancy restaurants. I made my own beef stock ( why buy stock when you can make it) and only had sweet onions. Didn't even need to add salt afterwards as the vinegar,worcestershire sauce was more than enough. WOW!!!!

Rum or Bourbon Balls

This was my first attempt at making rum balls, and OMG they came out amazing. I did tweak the recipe, as all I had were Dark and Milk Chocolate bars, Oreos and Digestives, I separated the Oreos and crushed the cookies then heated the rum as suggested and added 1/2 the sugar and the oreo filling. When the mixture was cooled I used a measuring tsp and rolled them into balls which were the perfect bite size, I then rolled them in unsweetened cocoa powder as I found that the sugar made it too sweet. This recipe yielded 70 tsp size balls.

Good Old Fashioned Pancakes

this is one of the best recipes for pancakes ever! my pancakes came out fluffy and delicious I didnt have any butter so I substituted it for canola oil and it still came out fantastic, next time I will reduce the baking powder to 3tsp though. great easy recipe!

Rice Cereal Energy Bars

Best Energy bar recipe ever, I love how the recipe is so versatile, I used a Granola Cereal with mixed dried fruit, I added chopped raisins, cranberries, and mixed nuts. I substituted the milk for a chocolate protein powder and cut used 1/4 cup brown sugar. I also heated the Peanut butter mix on the stove, as it would have been too messy in the microwave, when the mixture was bubbling i poured it over the granola and mixed like I've never mixed before. Punched it down till it was nice and tight cut and cooled for 2hrs. Bagged them and sent them with my hunney who was going on a 4day hike. He loved them and so did his fellow hikers.

Trinidad Stewed Chicken

I dont know what this is but it is definitely not trinidadian stewed chicken, stewed chicken does not contain any coconut milk or the butter at the end. please follow myrts78 recommendation for authentic trinidad stewed chicken.

Sweet and Sour Pork I

i didnt have any egg, so i dipped the pork in milk first then dipped into 4 tbs cornstarch, 4 tbs flour and 1 tsp baking soda, 1 tsp salt. and sauteed it. i sauteed my vegetables in another pan. the sauce i used the pineapple syrup from the canned pineapples and a little spicy chile sauce also didnt have any vinegar and used sake instead. overall a really good recipe will try again with vinegar.

Burger or Hot Dog Buns

after reading this recipe and all the reviews, i had to try it out, however i did listen to others and proofed my yeast with 1tsp of sugar in the water then once it proofed i added it to the flour/sugar/salt before the milk/butter mixture. i let the dough proof for an hour an then i divided it up into buns and placed in pan and let raise again for an hour. HOWEVER I had an oven malfunction. so i was forced to bake my buns in the toaster oven 2 at a time. and turning them over to make sure they didnt burn on one side. after this long ordeal, my buns still turned out fantastic, soft, and delicious. not even hard on the exterior.( which i was worried about being so close to the heat in the toaster oven) i will definitely try this recipe again, once i get a new oven. and i bet it will be even better!
