Eggplant Parmesan

I like the idea of baking the eggplant, but I added breadcrumbs, cottage cheese and canned tomatoes to make this more like a eggplant lasagna.

Easy Baklava

This was easy and great. I love Baklava and I made if for one of our Christmas dinner desserts. I reduced the sugar and added more honey, as suggested by others. I think this was good, but my batch could have used more syrup overall. Next time I wil make one and a half times the syrup. Regardless of the little changes, this recipe was great and the product was very yummy stuff!

Fresh Salsa II

I like that this recipe is so simple and that I can change it up as needed. (I used banana peppers this time, for instance.) I also used lime juice instead of lemon and prefer that.

Kimchi Jun (Kimchi Pancake) and Dipping Sauce

You can also make a yummy version of these with green onion kimchi. I used only the chopped kimchi, egg and flour and then fry. Good after the bar food.

Fresh Tomato Sauce

This is a good basic recipe. I didn't use the olive oil, green peppers or the onions but added fresh hot peppers and grated zucchini. I skipped the wine too. Now that you mention it, did I even really make the same dish?? However, if you would like the general idea of a fresh tomatoes sauce, this is a good starting place. Then just change it up to match your taste/what is in the fridge. The sauce is indeed runny/watery, but that did not bother me.

No Bake Chocolate Cookies II

These are really close to a recipe we used to make at my house when I was a kid. They are tastey, but don't set quite as well as I remember the other ones did. I'll have to keep looking for that recipe we used to use...

I made a lot of modifications to this recipe, but it was a great base to work from. I would always skip the canned green beans (yuck!) and make sure to include the wine (port works as well).

The Best Zucchini Fritters Ever

This is a decent recipe to start from, but I made rather a lot of changes to it. I grated the zucchini, added more onion, and skipped the milk. I used EVOO instead of shortening and used as little of it as possible. I also skipped the cheese inside the fritters and ate them with warmed goat cheese afterwards.

The Best Rolled Sugar Cookies

The only sugar cookies I have made before were really good vegan ones, but I lost that recipe. These were just as good as the others. I made a half batch and still had more than enough for my purposes. I used an eggwhite wash on top of half the cookies to stick on sprinkles and I iced the other half. I prefer the taste of the cookies without any icing or spinkles, though. Oh, and I more than doubled the vanilla and that was the right amount for me.

Wheat Crackers

These turned out okay, but not really as good as I had hoped. Not sure what i was expecting, but it was different than what I ended up with. Still, they provided a healthy base for cheese and other dips.

Candy Coated Pecans

These are sooo addictive. My fav. guilty pleasure. They are extra great warm right out of the oven. I never use exact amounts of nuts or sugar but they always turn out. I omit the wax paper and just put them on a cookie sheet. A friend of mine makes them with chilli flakes so they are sweet and spicey. That is a good version, but I prefer the original myself.
