Slow Cooker Chicken Stroganoff
Easy and delicious! Like others, I use reduced fat cream cheese, and add fresh mushrooms. For an added flare when I have the time, I sear the chicken first on the grill just enough to get the extra flavor and golden brown touch. I slice into medalions instead of cube, which impacts presentation more than flavor. This is one that if I forget about it for awhile, the family requests it! I serve it over Whole Grain noodles or regular egg noodles if I can't find the whole grain.

Cheesy Potatoes II
I've been looking for a base recipe I can tweak to make my own, and one that will compete with my sisters'. This one has potential. The modifications I started with were to puchase the frozen diced potatoes that have onion and pepper in them for flavor. I substituted Cream of Celery soup as well. I used 1/2 processed cheese and 1/2 shredded cheddar. Reduced the sour cream by 1/2, and took another reviewers suggestion to crumble corn flakes on top. I found the cooking time a 30 minutes left the potatoes a bit too hard for my husbands liking. I happen to like them with a little hardness left in them. Next time I'll try cooking them 45 minutes. I may also try seasoned shredded potatoes. They may hold the mixture together better.

Bob's Mexican Stuffed Chicken
For my first effort, I tried butterflying the chicken breasts instead of pounding and rolling. Next time I will go with Bob's original instruction as with my way, I struggled with the corn flakes. I did tweak the incredients to make it more Santa Fe inspired by omitting the mushrooms and adding black beans and grilled corn. I also increased the salsa and added about 1/2 cup sour cream to give the filling more of a sauce texture. Garnished with fresh avacado and just a dab of extra sour cream. My husband loved it. I made twice as much with the intention of leftovers. I sliced the remainers and used them to make a quesadilla the following day. A definite keeper!
