I grew up in a large family (7 kids) so I am used to cooking in bulk. I really look forward to left overs on those nights that I want a break. But I now have 3 foster sons and they like to eat. Even when I think I have cooked enough, I can now forget about left overs. I have 2 dogs that I just adore, I love gardening, not so much food but flowers, not that I wouldnt like to grow food, just not too experienced at it.
My favorite things to cook
I really like one pot dinners. I love to try all kinds of foods, new spices and I love this website. I have made alot of new things from allrecipes and the recipes you have all shared.
My cooking tragedies
OH my Gosh, I tried a recipe for the first time I say someone give on the Oprah show for a Thanksgiving Turkey, where you use lots of lemons and baste it every half hr. Well to make a long story short, dinner was at least 2 hours late, my brother missed dinner all together because he had to go to work,the turkey took forever to cook. The gravy I made from the drippings, was the strongest lemon flavor I had ever tasted. I tried deluting it, adding more stuff to it and finally my sister said just dont say anything and serve it. Well I saw a few people dumping the potatoes and gravy off their plates. I was really embarassed. I dont know what I did wrong as I am sure this cook on Oprahs show is an excellent cook. The Turkey however, was very moist and flavorful. Now the family playfully just tell me, please dont make the gravy when its my turn to host Thanksgaving.

Black Beans
I loved this recipe, however I started soaking the beans and then I looked for a recipe. I had already added some chicken broth that had quite a lot of salt in it. I then started adding the other ingredients and realized I needed to rinse the beans. So I drained them through a fine strainer and added more water and seasoning. I ommited the white vinegar, olive oil, and white wine, and added blended stewed tomatoes, a couple of tlbs of balsamic vinegar, finely ground up carrots for sweetness and healthliness, and a 15oz can of tomatoe sauce. I also added a diced up kielbasa sausage that I microwaved first and drained off the fat. I cooked it for several hours to help soften the beans, and also intensify the flavors. It was so delicious. Oh I also added basil in place of the oregano, didnt have any on hand. The beans softened up great in time.
