Eggplant Parmesan II

I could have eaten this eggplant without the sauce and cheese it was cooked so well. I read other reviews and found this worked best. Salting and letting the eggplant sweat for at least 30 minutes, rinsing and patting dry completely helped. I used eggs in a bowl, and mixed the parmesan cheese with the bread crumbs in a bag together which made it very easy to clean up. I listened to the suggestion of heating the oven to 450 degrees and I did 7 minutes on each side. I have an electric oven and they came out perfect. This was so good and I can't wait to make it again.

Chicken Tortilla Soup I

This was so easy and came out great. I'm a midwestern girl, living out in West Texas. I've been trying all different kinds of Tortilla Soup and this recipe is pretty authentic to what I get around here. And it's shamefully easy to make. The only reason I didn't give it 5 stars is because the lack of seasoning recommended in the recipe. I actually took the corn, frozen, and cooked it at the bottom of the saucepan, so it browned a little, added the garlic and onion, and then put in 1/4 cup of Chili powder, some oregano, cumin, coriander and cayenne pepper. I used Mild Hatch Chilies. The White Hominy was really good. I hadn't used that before. Everything was perfect, except if you like some seasoning without it burning off your tongue, you need to add a little more than was recommended. Thank you for an easy and delicious dish!

Savory Pumpkin Hummus

This was really good. I served it as an appetizer on Thanksgiving this year. I wasn't happy with the seasoning. To me, it was a little bland with the recipe (however, I like things with a zing). So, I would recommend you make the recipe as stated. Taste it and add what you like. I added 2 more garlic cloves, cayenne pepper and a little more lemon juice and it fit my tastebuds, but this was excellent, healthy, and full of fiber. This is something you can make throughout the year.

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach

An interesting twist on Meatloaf. The blue cheese taste was not "blue cheesy". It gave it a creamy, moist recipe. It took a long time for this to cook. Much longer than the recommended time. And the recipe doesn't state whether it should be covered or uncovered. Now that I know, I can plan my meal better. But the taste was really good and really worth it! Will make it again.

Roasted Kohlrabi

This was really good. Very easy. We made it as a snack on a rainy Saturday afternoon while playing board games. A much healthier alternative to chips and other snack foods. It would be fine as a side dish as well.

Butternut and Apple Harvest Soup

I loved this! High in fiber and great taste!!! Wonderful fall soup. It did come out thick which was bothersome to my husband but didn't bother me at all. For his, I thinned it out with a little white wine and water.

Candy Cane Fudge

We liked this and used the recipe for both work and friend holiday parties. We didn't bring any home. I made a mistake once of putting in regular chocolate chips and I got most of them out of the pot but not enough. Please use the white chips. Otherwise it looks like Candy Cane poop. Will look forward to making this at next year's holiday party!

Barley Chicken Casserole

I made this twice. Once with the chicken as a meal but I found the chicken to be dry. However, I made it as a side dish and we liked it so much better. I cooked the bacon but omitted it from the recipe. I used the bacon grease to sauté vegetables. I used carrots, zucchini, onion and garlic. I chopped the zucchini and carrots into very small pieces. I added all of the spices and cooked it in a casserole dish. We really enjoyed it as a side dish, but not cooked with the chicken (I did the chicken separate).

Berry Trifle

I liked it. I used a gluten free cake from betty crocker and the cake didn't get soggy. (Gluten Free winds up being denser than a regular white cake). I made my own whipping cream and berries out of the garden. I made it for a dinner party this summer and it was a hit.

Dumplings

Made these tonight with a chicken and dumplings recipe. Instead of using mixes, this was so much better, cheaper and tastier. I did use a smidgen more milk than the recipe called for but I just added a little bit to get the consistency I wanted.

Halupki (Stuffed Cabbage)

This came out really good. However, I did add a little brown sugar instead of white. I did not need to cook this dish as long as the directions recommended with the recipe, and I only had brown rice on hand which worked out fine. I will certainly make it again :)

Jersey Fresh Tomato Soup

I have never been a tomato soup fan until I made this. We have a CSA Subscription with a bountiful variety of tomatoes. I make huge portions, but they never stay around long. I have made it with fresh basil and it's very good. When I freeze large batches, I wait to use the flour/butter/milk addition. I add that when I defrost. I'd like to have a large quantity for the winter time, but unfortunately, as soon as it's seen in the freezer it mysteriously disappears!! Also, I have made it and added a stalk of celery for extra flavor, but take it out before you blend.

Spicy Pumpkin Fudge

This came out really, really good. My husband makes a great peanut butter fudge, and this was his first time venturing out into new territory :) The recipe is simple. I just greased a 9x13 pan and we let it cool on the counter and put it in the fridge. It was a hit at his company Thanksgiving party. It tastes best when refrigerated.

Angela, You're right. these enchiladas are awesome! My husband and I loved them! I used the suggestion of cooking up the chicken, onion and spices in the crockpot and then did the rest the way you suggested. Thank you so much for sharing this. I'm looking forward to making this again!

Easy Pumpkin Muffins

This was delish! I followed the recipe, but I'm not a fan of Anchovies, so I used some anchovy paste to add some flavor and texture. It was perfect. We belong to a CSA so we will be getting a lot of Kale this summer and I will absolutely make this again!

Slow Cooker Turkey Breast

This was really, really good. I made this in my electric roaster. The pan drippings made a great gravy. Even in the electric roaster, I had a nice, crispy crust because of the buttering I did. Thanks so much!
