I've been married for 6 years. I'm from the Midwest and spent the last 5 years living on the East Coast. Now I'm happily back in the center of the country, living in TEXAS!! I've never been a picky eater, but I hate fast food. I like to find a recipe and make it our own. all recipes has helped make some great traditions in our house!!
My favorite things to cook
Since I work full time, I love to use the crockpot during the week when I can. I am also a big fan of trying different seafood recipes along with different ethnic recipes. But being from the midwest, my husband and I love casseroles!
My favorite family cooking traditions
1. Sunday Dinner is mandatory. 2. Summer is meant for grilling everything (including watermelon)
My cooking triumphs
I've made several holiday turkey's on my own with no help. I don't have any extended family to learn from so it's required a lot of research. But I can take a 12# turkey and make a fabulous dinner, leftovers, 4 turkey pot pies for the freezer and amazing turkey stock that lasts a good while. I waste very little in the pantry/fridge!!

Eggplant Parmesan II
I could have eaten this eggplant without the sauce and cheese it was cooked so well. I read other reviews and found this worked best. Salting and letting the eggplant sweat for at least 30 minutes, rinsing and patting dry completely helped. I used eggs in a bowl, and mixed the parmesan cheese with the bread crumbs in a bag together which made it very easy to clean up. I listened to the suggestion of heating the oven to 450 degrees and I did 7 minutes on each side. I have an electric oven and they came out perfect. This was so good and I can't wait to make it again.

Chicken Tortilla Soup I
This was so easy and came out great. I'm a midwestern girl, living out in West Texas. I've been trying all different kinds of Tortilla Soup and this recipe is pretty authentic to what I get around here. And it's shamefully easy to make. The only reason I didn't give it 5 stars is because the lack of seasoning recommended in the recipe. I actually took the corn, frozen, and cooked it at the bottom of the saucepan, so it browned a little, added the garlic and onion, and then put in 1/4 cup of Chili powder, some oregano, cumin, coriander and cayenne pepper. I used Mild Hatch Chilies. The White Hominy was really good. I hadn't used that before. Everything was perfect, except if you like some seasoning without it burning off your tongue, you need to add a little more than was recommended. Thank you for an easy and delicious dish!

Savory Pumpkin Hummus
This was really good. I served it as an appetizer on Thanksgiving this year. I wasn't happy with the seasoning. To me, it was a little bland with the recipe (however, I like things with a zing). So, I would recommend you make the recipe as stated. Taste it and add what you like. I added 2 more garlic cloves, cayenne pepper and a little more lemon juice and it fit my tastebuds, but this was excellent, healthy, and full of fiber. This is something you can make throughout the year.
