Ed's Favorite Beer Can Chicken Rub

What a surprise! When I found this recipe, I wasn't sure what to think, but what the heck. I had all the ingredients handy, so why not? It was really, really good! I used the whole batch on one, big, Amish chicken. I rubbed the outside generously and sprinkled a bunch more into the cavity. In addition (thanks to watching cooking shows on TV), I took 2 TBS of Olive Oil and squeezed a lemon into the oil and drizzled that over the top to get the skin crispy, brown and spicy). As a side note, don't throw the juiced lemons out, toss them into the cavity to bake some of that lemony flavor into the chicken. It was fabulous! When it was all over, I took the drippings and brought it to a boil on the stovetop adding in 2 TBS of Wondra Sauce & Gravy Flour to make a sweet, spicy gravy that was great over our stuffing and for dipping the chicken too. Served with Green Beans with Almonds and Carmelized Shallots, this was a 5 star dinner!!! Thanks to Ed for inventing such a nifty rub!

Barbie's Tuna Salad

FAN..TAS...TIC!! This was wonderful. The curry makes a ton of difference. I added chopped celery for crunch and since I had an onion that needed to be used, I substituted that for dried. This was wonderful on crunchy, freshly toasted French bread.

Simple BBQ Ribs

Easy & good. I used bone in pork ribs and they turned out wonderfully. The only change I made was that I boiled mine in a mix of one beer & the rest water. I don't know if the beer made any difference in the taste, however, it did make the house smell really good when cooking. I will definitely make ribs this way again.

General Tsao's Chicken II

I had some leftover homemade chicken tenders (boneless chicken breasts cut into strips, breaded & deep fried until crispy), so I bypassed the beginning part of the recipe & just cut up the chicken tenders to use with the rest of the recipe going along as written. This was AWESOME! I eat this regularly when I go out for Chinese & this was just as good, only cheaper. Just the right amount of spice! Added some fresh broccoli and it was fantastic. Thank you ChefDaddy. This one's a keeper!

Fondant Potatoes

I must say, try to watch the video before making these. It makes the instructions so much easier. I read some reviews before attempting to make these. I combined spice suggestions and used thyme, rosemary & tarragon (I only had dried spices available, but am sure that using fresh would throw this over the top). The texture of the potatoes was crispy, creamy & yummy. I didn't think these were too time consuming, considering the professional result. Served as a side dish to BBQ NY Strip (also on this site). Can't wait to make these again with fresh herbs!! Thanks Chef, for an awesome recipe.

Fried Cabbage II

I made this yesterday for a get together with a bunch of guys drinking beer & BBQing stuff. I made it at my house, put it into a large Pyrex casserole dish for transport. My sampling at home told me it would be well received (otherwise I would have left it at home and went over empty handed). What I didnt' expect....is that warming it up in the oven once at my destination....made it BETTER!! It got crispy around the edges and the bacon got crispy again as well. The guys loved it and next time, I'm going to put it into the oven to get it all really crispy. I think that's the little kick it needed to make it 5 stars. Thanks Jen for the recipe. It was really good & I look forward to playing with this recipe. Also next time I'm going to use 1/2 head of green cabbage & 1/2 of red for a visual change. I'll report back.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Cola Pot Roast I

I made this almost exactly as written, other than using fresh tomatoes (that were almost ready for me to trash, due to being too ripe). Everything else was as written. I made it in my cast iron Dutch Oven on the stovetop. Filled the house with wonderful smells & served with homemade mashed potatoes. It was juicy, yummy & tender. I don't know how some of the other reviewers are complaining that it was too sweet. I used 1/2 can of regular Pepsi and it was fine. No where near sweet. I am guessing that some people might be using diet soda. Next time I think I'm going to try it with regular Root Beer. Thanks for a nice, easy recipe!

Grands!® Mini Chicken Pot Pies

Loved it with minor modifications. Used Cream of Celery Soup & frozen broccoli & corn sprinkling in some sage & a bit of crushed red peppers for a bit of zing, pan fried a chicken breast in a little butter with Thyme, Rosemary & Garlic Powder, before chopping it up and mixing it in with the soup & veggies. No problem with flavor & I'll be making these again!

Roasted Brussels Sprouts

I've always eaten brussel sprouts, but never loved them, until now! The browner they are, the tastier they are!! Don't throw those little leaves that fall off out. They turn dark brown and become crispy like potato chips and those are the best part of the dish. My husband & I fight over who's going to get them. Thanks for posting this recipe. It's quick, easy & delicious.

Sweet Polish Sausage

The whole family loves it! Kids and all. Not to spicy.....just right. Every time I've made it, I've gotten the same reviews. ***** (Five Stars in my book!) UPDATE: Great as a make ahead dish. We did this and put it in foil to warm up while ice fishing. All you need for utensils are toothpicks. Yummy & easy. Also another good tip is to bake in a glass Pyrex casserole dish. It always caramelizes nicely and looks pretty when serving. Great over rice or over buttered egg noodles. Either way, you will have no leftovers!
