About this Cook
I am a mother of a beautiful 28 year woman, a fiance to an incredible man, and future stepmother and grandmother! I have always loved to cook and consider myself rather resourceful. I had to be, since I was a single mother for many years, so I learned alot along the way.
My favorite things to cook
I love using a pressure cooker. I grew up watching my mom use this wonderful tool, and I am surprised how many people don't know how. It really captures all the nutrients of food, and cuts cooking time by 2/3rds.
My favorite family cooking traditions
I ALWAYS make Thanksgiving dinner. It is my favorite by far. It took me 25 years to perfect my White & Cornbread Sausage Stuffing!To die for, if I do say so myself.
My cooking triumphs
I practically can go to a pantry, find whatever, and make a meal out of it. I had a friend who told me that I could make soup out of one shrimp! :)
My cooking tragedies
My early years of cooking Thanksgiving... and a raw turkey...ugh!

Eggplant Parmesan II
This is a GREAT method to cook eggplant...so much easier and cleaner than frying. I always "tweek" recipes. One thing I did with this one is use about a cup of ricotta, 8 oz. of mozzarella, parmesan and 1 egg mixed together, and make it a middle layer. No salt is added to this mixture, as the seasoned bread crumbs contain enough seasoning. Also, the "sweating" of the eggplant (in previous posts) is a good idea. I like to make my own sauce...delish!

Grandma Jeanette's Amazing German Red Cabbage
This was wonderful. My fiance raved and raved...I included it with my Sour Beef & Dumplings recipe...what a combo!

Boneless Garlic and Rosemary Rubbed Prime Rib with Red Wine Mushroom Sauce
This was the first time I ever prepared a prime rib. It without a doubt riveled most restaurant prime ribs I have had. I also used beef broth instead of chicken, and used additional dried herbs in the rub. Simply outstanding!
