Homemade Flour Tortillas

If only I could roll mine thinner... I can't seem to roll them thin enough. Perhaps if I decreased the baking powder. A co-worker of mine, Spanish teacher, would make these and share them. I enjoyed them plain.

Pumpkin Roll I

My favorite birthday treat was always carrot cake, until I tried Pumpkin Roll in the mountains of Georgia, on one of our fall vacations, on my birthday. Pumpkin Roll is a timely treat. I have a hard time sharing!

Fish Tacos

I took frozen breaded haddock, and put it into the pizza oven. We made the yogurt sauce, decreasing the cayenne. In addition, I made a simple tomato salsa: tomatoes, cilantro, jalapeno, onion, vinegar, lime juice, & sugar. The combination was heavenly. I also made a mango salsa. Both salsas with the yogurt sauce was delicious. We do not like corn tortillas, so we served it with flour tortillas, and lettuce (no cabbage). It was quick, easy, and amazing. Why fuss with the mess! A pizza oven gives it a nice crisp on both sides, unlike the conventional oven. I have left over sauce, and salsa. Can't wait to try it with blackened tuna and grilled salmon.

Best Bread Machine Bread

This was my first successful bread machine made bread. I failed so many times that I left the bread machine to my husband. I'm homeschooling, and we have home economics... This recipe was a great success. It came out perfect, and it tasted great. Gone in one meal. If I had made an extra, it would have been gone too.

Mai Tai

I've tried many Mai Tai recipes, and hated them all. This is by far the truest Mai Tai recipe. It has the right sweetness to it.

Holiday Chicken Salad

We have always made a similar recipe, but with grapes or mandarin oranges, instead of cranberries. The cranberries make a nice option, but I prefer the sweetness of grapes and mandarin oranges instead.

Famous Meatballs

Growing up we had Hawaiian meatballs over rice. The recipe did not lend itself to having that extra sauce to enjoy over rice. So I added water and some beef bouillon, since I did not have extra pineapple juice.

Apple Crisp II

We always double the topping, but be prepared to have a glass of milk to go with it. The apples didn't seem to sweet, not sure if my son measured correctly or if water had something to do with it.

Storybook Gingerbread Men

My son made them. We had to add more water, but it was probably the way he measured the flour. We didn't have molasses, so we used dark corn syrup. They taste great. I don't like a strong molasses flavor, so I'd probably go 1/2 c molasses and 1/4 c dark corn syrup if we make them again.

Dad's Hamburger Gravy

I homeschool my boys, and told them to go through the kitchen cupboard and pick out seasonings to add to this. We used garlic, sea salt, pepper, beef bouillon, and more. The beef bouillon really gave a nice flavor to this. We served it as a topping over green beans or mashed potatoes. We also enjoy it on toast. Our family has always made the creamed corned beef with Budding...

My son made these for Mother's Day. We added 3/4 c toffee and 3/4 c butterscotch chips. Yumm! My dad always made us oatmeal/butterscotch cookies as a child.

Easy Chicken Enchiladas

This is an entirely different flavor, than the ones I make with cream of chicken soup. I like both. The cream cheese filling could easily serve as a dip.
