Holiday Chicken Salad

We have always made a similar recipe, but with grapes or mandarin oranges, instead of cranberries. The cranberries make a nice option, but I prefer the sweetness of grapes and mandarin oranges instead.

Apple Oatmeal Crisp

Others commented on the dryness. We like apple crisp, but we hate when the crisp sinks into the apples, and there's nothing crispy. This is not that kind of recipe, as there is crumb topping on the bottom and top. So, we liked the crumble topping. There is nothing mixed in with the apples, so the apple portion is dry. One rater mentioned mixing it all together, and I will try that next time. We used Jonathan apples which stayed firm during cooking. Picking another apple should have different results.

Spice Balls

I was looking for a drop dougnut recipe, in order to make apple fritters. The dough was a bit too thick for a drop recipe. Next time, I will add a bit more milk. I chopped up two apples and mixed into this recipe for the apple fritters. My family loved them.

Asian Salmon

This is a good recipe. We only had a few hours to marinade it. If we had left it overnight, it would have been amazing. I could get the flavor from the thinner pieces of salmon. So note to self, let it marinade overnight or make the pieces thinner. The marinade smells just like Hawaii! This will make a great marinade for the Shoyu Chicken.

Jimmy's Clam and Corn Fritters

My corn fritter recipe is packed away. We left out the clams, and onions. We increased the sugar to 1/4 c. We fried the fritters and rolled them in cinnamon and sugar. They are more like a sweet hush puppy, than the corn fritters I made growing up. I like the light and airy fritters, so I gave this a 4-star. My husband and son loved them, and couldn't stop eating them. I've never had a clam fritter. I think I'd be more inclined to jalapeno and cheddar, maybe crab...

Pumpkin Roll I

My favorite birthday treat was always carrot cake, until I tried Pumpkin Roll in the mountains of Georgia, on one of our fall vacations, on my birthday. Pumpkin Roll is a timely treat. I have a hard time sharing!

Spaetzle I

It gets 5 stars, when you add a bit more water to the recipe, so that it can easily be squeezed through the spaetzle press and put into the frying pan with butter and seasoning salt. I like my spaetzle browned in butter and seasoned. For a family of 6, I have to triple the recipe to have left overs. I don't like going through the fuss of cleaning up the dough, unless we can eat it for more than a day. For those on a diet, it's about 205 calories for 3/4 cup when you add in 2 tbsp of lite butter to the entire batch.

Easy Upside Down Russian Biskvit With Apples

My son made this recipe. We sprinkled cinnamon and sugar on it. It would be more delicious with cinnamon, sugar and pecans sprinkled across the cake before going into the oven.

Dora's Christmas Cookies

I've had better tasting. I prefer sweeter tasting. On the plus side, I had no butter in the house and there aren't too many sugar cookie recipes that don't call for butter. My son made them; directions were great. These puff up alot, so roll them out thin.

Reuben Casserole

It was dry and not cohesive. We added 1 c of water, used 1 1/2 c of thousand island instead, and mixed 1/2 the cheese into the casserole. We mixed all the ingredients, with the exception of 1 c of cheese and spread it into a greased cake pan. Then topped it with 1 c of cheese. Making the changes I'd give it a 4-star, but know that I've had better.

Chocolate Zucchini Cake II

I used 3 cups grated zucchini, regular milk, and mixed 1 1/2 c chocolate chips into the mix and frosted these with chocolate frosting, for a triple chocolate delight. Sadly, I was out of pecans. This is a very moist cake.

French Onion Soup Gratinee

We used 4 white onions. I did not like the french bread, swiss cheese and asagio... If I make it again, I will likely use Texas toast and another variety of cheese.

A Firefighter's Meatloaf

My son was able to make this. I did not give it a 5 star, because we have one meatloaf recipe that tops this one. It has oatmeal, milk, and cheese in the recipe. A meatloaf recipe done right is moist, and it was! My son could not interepret what it meant to soak the bread. We used 2 Texas toast and 1/3 cup water. We didn't drain anything. We topped it off with our favorite BBQ recipe.

Double Tomato Bruschetta

We did not like the sun-dried tomatoes in this recipe. It didn't have enough of a vinegar flavor, and had too much oil. We put leftovers in the refrigerator and my husband liked it better the second day. Next time I would leave out the sun-dried tomatoes, decrease oil to 3 tbsp, increase vinegar to 3 tbsp, and add scallions.
