Quick and Easy Pizza Crust

This is a great base recipe... I added garlic powder, onion power, basil, and oregano to the olive oil. I also used the same amount of olive oil and spices to brush over the edge of the crust before baking. I cooked it on a pizza stone with a liberal amount of cornmeal and it turned out nice and chewy with a little bit of crunch! Very quick and easy.

Mayan Couscous

These flavors compliment each other very well! I was a little short on time so I didn't roast the garlic, just minced it raw. I also used several jarred jalapenos since I didn't have a fresh one on hand. With these small changes it still turned out great.

Vegetarian Chickpea Sandwich Filling

I made this exactly as written and it was delicious! I used a potato masher to mash the chickpeas... It took a little elbow grease, but was worth the effort. I think the food processor would have made it too much like a hummus texture. I think next time I will microwave the beans a little to soften them up before mashing.

Quinoa and Black Beans

This is an excellent recipe! I've tried quinoa before and wasn't too impressed, the first recipe I tried was pretty plain, just had a little ginger and green onions. So, I was a little skeptical on trying quinoa again, but I still had half the package left from my first attempt and decided to give it another go. I figured you can't go wrong with a black bean/corn combo. These flavors go together wonderfully.

Vegetarian Kale Soup

I loved this soup! I used klamath potatoes (unpeeled) since that was what I had on hand. After I started making this, I realized that I only had 3 bouillon cubes, so I upped the garlic and spices a bit and added some dried celery flakes. I also used the fire roasted tomatoes as someone had suggested. I seriously ate half of the pot in one day, it was so good!

Sweet and Tangy Sauteed Collard Greens

This was so good! I am definitely going to have to make the balsamic honey dressing again for other foods. Great combination of flavors. Also - next time I think I will chop the onion - the sliced onions had an unappealing appearance - almost earthworm-like once the sauce was added.

Beer Cheese Soup II

I made this recipe as written and it was pretty good... Not quite cheesey enough for my tastes so I added an extra cup of cheese. I used Goose Island 312 beer and (with the extra cheese) it turned out great!

Butternut Squash Casserole

I didn't care for this receipe... I thought there was way too much liquid. I didn't add all of it to the squash yet it still came out to this weird eggy texture. Also way to sweet for me.

Broiled Grapefruit Crisp

Tasty! Broiling mine for about 3 minutes was enough for me... The top was almost burnt, but the grapefruit was still cold in some spots. Next time I will try the baking method so that the grapefruit has enough time to get heated up without burning the top.

Vegetable Pizza I

I really liked the idea of this recipe, but it didn't quite turn out how I'd hoped. I followed the directions exactly as written, but I thought there was way too much of the cream cheese/dip mixture. If I make it again I will probably only use one package of cream cheese. Secondly, as an admitted veggie lover I was excited that I could use 5 cups of fresh veggies, however I found this again to be a tad too much as well - it was hard to take a bite of this without the veggies toppling over onto your plate. Next time I make this I will reduce the cream cheese and probably only use about 4 cups of veggies.

Acorn Squash Soup

Very good! I only had 2 medium-ish sized acorn squash, which only gave me about 2-1/2 cups... But that could haven been due to the fact that I was impatient with the squash after it came out of the oven. I tried scooping out the squash from the skin with a spoon and ended up making a big mess and burning my fingers. By the time I got to the last half it had cooled a little and I was able to peel the skin right off and actually get all of the squash out as opposed to trying to scrape it out with a spoon. The soup was still good even though I didn't have the full 3 cups of cooked squash. I did use vegetable broth and omitted the bacon to make it vegetarian friendly. Will definitely make again.

Artichoke Spinach Lasagna

I originally made this recipe as a vegetarian alternative to the traditional meat lasagna for a party. Even the meat eaters loved this... it disappeared long before the regular lasagna. One change I did make was on the sauce. I intended to make it with alfredo sauce, but accidentally bought the wrong size - only a 22 oz instead of 28. In a pinch, I mixed in a 6 oz can of tomato sauce to the alfredo and it turned out great. Will probably make the same way next time.

Homemade Dog Food

I made this for my Golden Retreiver and he loved it! I mix a few spoonsful into his dry food in the mornings, so he's not missing out on some of the missing nutrients like calcium. So one batch of this lasts for a long time. I freeze most of it in muffin tins so that I can defrost a little at a time. For his evening meals I squirt a capsule of fish oil over his dry food. This gives him a nice shiny healthy coat!
