I enjoy making this easy-peasy little dessert for my family, and have it bake while we eat dinner. Clear the dinner plates, serve with ice cream, and a cup of decaf...Lovely! We finish the whole thing almost every time!

Exquisite Pizza Sauce

This sauce is AMAZING! If I ever were to own a pizzaria - this would be the "house sauce!!" Hubby and I have decided that it's the honey that sets is above and beyond! Lots of ingredients make this looks scary and difficult - it is neither. Easy, and well worth all the little measurements!!

Monkey Bread Muffins

Holy cow, this is good! And super easy!! I added 2 apples from our own tree, cut into 1/4" pieces and mixed into the dough/sugar/cinnamon mixture. Viola! APPLE MONKEYS!! Serve with a scoop of vanilla ice cream, and my fam is thrilled!

Rhubarb Strawberry Jam

This is a very easy recipe, and quite yummy. I've had friends bring their jar back for "refills"!! Is a tad on the sweet side, but when I used Splenda in place of half of the sugar, the jam remained pretty runny. Obviously the sugar is important for the "gelling" aspect. It was still tasty, even when runny! Made as the recipe directs (with sugar) it sets up just fine.

Fried Mac and Cheese Balls

So far, I'd give it 4 stars - the biggest downside is the lengthy time of prep. My 9-yr.old daughter was jonesing for fried mac and cheese after having a restaurant version this summer. This was a fun way to get her in the kitchen; measuring, stirring, counting, and telling time. (We are just now to the "freezing" stage.) I can't yet comment on the taste , but I do think it would be helpful to know what size scoop/disher everyone is using. After reading the "frozen in the middle" complaints, I choose my smallest disher (#60)... the balls are pretty small. Maybe the ones that didn't cook through are just a tad too big? Just a guess... We'll see how these turn out!!

Matrimonial Bars

To make this recipe more healthful for my diabetic hubby, I substituted whole wheat flour for half of the white flour (to increase dietary fiber). I also used Splenda Brown Sugar Blend in place of regular brown sugar, and Splenda instead of white sugar. To make slightly thinner bars (same taste - smaller portion), I made the recipe in the Pampered Chef large bar pan (about 10"x16") instead of in a regular 9"x13" inch pan. (Date layer is spread VERY thin to cover this added real estate.) Reduce cooking time to about 30 minutes. The end result: Very tasty! Even picky 6-yr. old really likes them!
