Cake Balls

Following suggestions of others, I waited 1/2 an hour and then crumbled my cake. I did yellow cake with cream cheese frosting, dipped in chocolate. THANK YOU to whoever said to keep hands moist while rolling balls--that really helped! I also chilled my balls before dipping them, and that helped too. Just used a spoon to dip--created some pooling of chocolate, but overall much easier than a toothpick.

Peanut Butter Frosting

Used TRindell's modifications (cutting the sugar by half and using only 2 Tbsp milk rather than 1/3 cup cream), and LOVED it! My co-workers are going to rave; I can just feel it.

Diet Friendly Apple Dip

YUM!! Thanks for the modifications! I used light cream cheese (what I had on hand) and half white Splenda and have brown sugar (didn't have brown sugar substitute). :-D

Broccoli and Cauliflower Casserole

DE-licious! Following previous reviews, I did make some changes. Used 1 cup of Brown Minute Rice. Steamed the broccoli and cauliflower. Used only 2 Tbsp of butter. Added 2 cloves of garlic to the onion. Used approx. 1/2 cup shredded cheddar cheese vs processed cheese food. And changed the order--mixed soup, milk, and cheese into onions and garlic, then added rice and veggies after the cheese had started to melt. YUMMY!!! (Only 7 Weight Watcher Points Plus for 1/6 of the batch).

Quinoa and Black Beans

A little bland...would definitely add more kick next time. Maybe I'll follow others' suggestions and throw in a can of tomatoes with green chiles.

Best Spanish Rice

SO easy and SO tasty!!! I made this for the first time for the guy I'm currently seeing, and he RAVED about it--and had thirds! If the way to a man's heart truly is through his stomach, I suspect I'll be seeing more of him. Thanks for the awesome recipe!

A Simply Perfect Roast Turkey

Moist and delicious! Our 16 lb bird was done in about 3 hours, but stayed warm and moist in an oven on very low heat unil we were ready to carve it.

Mom's Zucchini Bread

YUM. I did as suggested--used 1 cup brown sugar and 1 cup white sugar (actually 1/2 cup Splenda baking blend), 1/2 cup oil and 1/2 cupple sugar-free applesauce, 2 eggs and 2 egg whites, and just about doubled the zucchini. Absolutely delicious!!

Delicious Raspberry Oatmeal Cookie Bars

Very tasty. I wish they were a little crunchier though. They hold together, but I feel like the jam makes the bar almost soggy. Maybe if I pre-baked the crust layer? Or perhaps used a filling that's more like a pie filling than preserves? (I feel like the preserves almost give them a soggy-jelly-sandwich feel--in the best possible way, of course). Even as written, a very tasty dessert.

Brown Rice and Black Bean Casserole

Delicious! Based on past reviews, I made a few changes. Use white rice rather than brown (what I had on hand), used 1/2 cup of rice rather than 1/3 cup, added 1/2 a diced green bell pepper, bulked up the shredded carrots a bit, and used reduced fat marble jack cheese rather than swiss. Sooo good! I could have eaten way more than one portion in a sitting!

Quick Peanut Butter Cookies

I've been making this recipe for years! People are always shocked to find out they're made with only 4 ingredients. When I make them, I never roll them into balls (I just drop by teaspoonfuls) or chill the dough. I also bake at 350 for 10 minutes rather than at 325 for 6-8. These cookies are buttery and delicious, perfect for peanut butter lovers!

This was delicious! We were so eager to eat it that we turned it out of the pan before it was completely set, but it was still great. We left out the gumdrops and used plain peanuts (because I made a mistake at the grocery store). Very good! And so much fun!

Best Guacamole

Made some modifications, but it was delicious! Lime juice instead of lemon...added some cilantro...used less than 1 tsp of oil. DELICIOUS. Everone raved...it was almost gone before the "technically" started.

Black Bean Vegetable Soup

Yummy. Tasted just like I hoped it would. I did add an extra can of beans and cut down on the broth as suggested by other reviews. I pureed 1 1/2 cans of beans, threw the other 1 1/2 into the pot, and I cut down the broth to 2 cups. YUM.

Caramel Corn IV

This came out great! After reading the reviews, we used air-popped corn, doubled the sauce, turned the oven down to 275ish, stirred every 5 minutes, and only cooked it about 15 minutes total. Perfect!
