Italian Fig Cookies I

This will be the second year that I'm making these cookies. They were such a hit with everyone, including those who thought they didn't like figs! The whole orange gives this such a wonderful fresh taste and the apple keeps them so moist. I had a few dozen left and they were in the freezer from Christmas until July when I pulled them out for a few friends who stopped over for coffee. We couldn't believe how wonderful they still tasted. They've been hounding me to be sure I'm making them for Christmas. Now that's a memorable cookie!

Fajita Seasoning

This is a great recipe for delicious fajitas! I made it just as listed and marinated 6 chicken breasts for 4 hrs in this dry mix + 1/4 cup of olive oil, 2 T of lime juice and 1 T of white vinegar. If you prefer really spicy, add more cayenne, otherwise this is a medium spicy marinade. Grilled them and served them with pico, guacamole and sour cream. My guests raved about it!

Pastry Cream

This recipe is exceptional for texture and ease of making it. I still gave it 5 stars even though it's a little sweet for my tastes, but that's not a reason to give it less stars. I am going to whip heavy cream and fold this in as soon as it's cool for a filling for cream puffs cause I like my filling a little lighter.

Nana Dot's Irish Soda Bread

I was really excited to make this soda bread and was so disappointed! It had such a distinct flavor of too much baking powder/soda combination and was actually a bit salty. I followed the directions exactly only varied by omitting the currants and caraway seeds. I'm giving it 1 star because I thought the consistency was good, but not the flavor. Also, I'm not sure what size loaves you're making cause it's not possible to get 2 unless they are only 4-5 inches around.

Big V's Slow-Cooker Pulled Pork

This recipe is great and because I was looking for a flavor that had some barbeque undertones, I took the suggestion of adding barbeque. After I shredded the pork, I took the juice that it cooked in, placed it in a pot and added one large bottle of Sweet Baby Ray's Original. I must say that I made 25lbs of pork for a party and that was why I used the large bottle. You can adjust your recipe by taste. It was just enough to add the barbeque flavor to the delicious cooking juices.

These are absolutely authentic and delicious! We ate them with cinnamon/sugar and honey, but the most popular was powdered sugar. They are very similar to the light and airy Biegnets from the French Quarter in NOLA. The only thing I did differently was that I made up the batter about 2 hours before I fried the Zeppole. I just left it in the pan I had cooked the batter in. I'm not sure if this is what made them so light or just because of the recipe, but I'll definitely find out when I make them again!

Slow-Cooker Pepper Steak

I made this last evening for my family. I'm always a little skeptical of round steak because I've been disappointed with how tough it can be even when it's cooked. In this recipe, it was so tender! I doubled everything in the recipe except for the salt, which I kept at 1 tsp. Everyone loved it!

Lemon Bread

This lemon bread is exceptional. It is very easy to make and has a wonderful fresh lemon flavor. I tend to use sour cream instead of milk in recipes like this because I prefer the dense/moist characteristic it gives sweet breads. In this recipe I used 1/4 cup sour cream and 1/4 cup milk which was perfect.

Refrigerator Nut Rolls

These nut rolls are very easy to make as far as making nut rolls are concerned. The texture of the dough is perfect and they are delicious. My family and friends all raved about them saying they were the best they had ever tasted. We are a cookie family, so that is a pretty great review. I used the recipe exactly as written except I rolled the prebaked cookie in granulated sugar because I read the other reviews which stated they were not sweet. My mother and her Italian friends did this with their nut rolls. I think this made them perfect. it does make a lot, but they freeze very well and you always have something you can pull out of the freezer when you get unexpected company.

Sunday Brunch Eggs

These eggs were a hit during the Christmas holidays! I made them twice and the second time we made them as a breakfast sandwich. I did cut the cheese in strips and laid it on the Canadian Bacon in a triangular pattern. This housed the egg perfectly and was plenty of cheese. I cut the heavy cream with 2% milk and it worked fine. This is definitely a recipe I'll make often.
