About this Cook
I have 3 teenage boys. Grew up in AZ. I love living in the South, but really miss the Southwest. My biggest dilemma in cooking is deciding what to cook for dinner. I love the daily dish in my e-mail from all recipes
My favorite things to cook
Carne con chili, Roast beef & mashed potatoes, chicken scallopini, Hungarian beef dish, potato cheese soup & cornbread, chicken tortilla soup
My favorite family cooking traditions
Hot apple cider on Christmas Eve & Christmas Day, Cream Cheese Pie on Easter, & Sweet Potato Souffle every holiday
My cooking triumphs
The chicken scallopini, Texas sheetcake, & the twice-baked potatoes
My cooking tragedies
Some dish with mashed potatoes, beef, & green beans.....yuck!

Ultimate Twice Baked Potatoes
I made these for our football players "before the game dinner" & they were wild about them. They ask for them every game now. Taste as good as a restaurant.

Pollo Mediterranean
Fabulous! We're not big Italian fans but the flavors of this chicken & sauce were wonderful! Made this in the crock pot, using frozen chicken tenders, which also made this so easy! I did substitute a can of chopped tomatoes w/garlic & onion for the sun dried tomatoes and added a chopped red bell pepper and a can of artichokes. I also used a small jar of capers & the green olives, but the olives definitely made the difference! I mixed everything but the chicken & artichokes together & then layered the chicken, sauce, & artichokes. Cooked on high 5 - 7 hours. Ladled it over bow tie pasta. Thanks for the recipe! This will be a great dish for potlucks and soooo easy!!

Vanilla Ice Cream IV
Oh yeah!!! This is soooo good! This will be the only recipe I use! It reminds me of the hand cranked, homemade icecream I had when I was growing up. I can't imagine that this tastes like gooey pudding (as one reviewer said), although, one time I did make a recipe that tasted just like that.... I think I did something wrong. That recipe had lots of eggs & I think I cooked it too long.
