My favorite things to cook
Carne con chili, Roast beef & mashed potatoes, chicken scallopini, Hungarian beef dish, potato cheese soup & cornbread, chicken tortilla soup
My favorite family cooking traditions
Hot apple cider on Christmas Eve & Christmas Day, Cream Cheese Pie on Easter, & Sweet Potato Souffle every holiday
My cooking triumphs
The chicken scallopini, Texas sheetcake, & the twice-baked potatoes
My cooking tragedies
Some dish with mashed potatoes, beef, & green beans.....yuck!

The Absolute Best Cookie Recipe Ever
This is the cookie recipe I have been looking for! It has just the right amount of sweetness and I don't want a butter cookie, just one made with plain Crisco. When you top it with the icing, it is plenty sweet! As far as rolling it out, I had no problem. I roll it out on a floured pie dough mat, flour the top of the dough, put a piece of wax paper over it and roll it out - quite frankly, I was amazed it didn't stick! I find I need to do this for anything I roll out to keep from adding a massive amount of flour and becoming tough. These are like the cookies I had when I was a little girl! Loved them! Thanks!

Ultimate Twice Baked Potatoes
I made these for our football players "before the game dinner" & they were wild about them. They ask for them every game now. Taste as good as a restaurant.

Pollo Mediterranean
Fabulous! We're not big Italian fans but the flavors of this chicken & sauce were wonderful! Made this in the crock pot, using frozen chicken tenders, which also made this so easy! I did substitute a can of chopped tomatoes w/garlic & onion for the sun dried tomatoes and added a chopped red bell pepper and a can of artichokes. I also used a small jar of capers & the green olives, but the olives definitely made the difference! I mixed everything but the chicken & artichokes together & then layered the chicken, sauce, & artichokes. Cooked on high 5 - 7 hours. Ladled it over bow tie pasta. Thanks for the recipe! This will be a great dish for potlucks and soooo easy!!
