Oatmeal Chocolate Coconut Chewy

I used macadamia nuts instead of walnuts the first timeI made these. I gave some fresh out of the oven to my neighbours and they declared them "the best cookies ever". This time I am substituting dried cherries for the nuts.

Refreshing Cucumber Soup

Greek Pasta Salad

This is a great tasting salad as is. I think the next time I will try stuffing large pasta shells with all of the other ingredients plus some torn lettuce. It would be more labor intensive but the presentation would be lovely.

Marietta's White Chocolate Macadamia Biscotti

A very, very good biscotti recipe! So good I even saved the crumbs to sprinkle over ice cream! TIP: Use an electric knife to slice the cookie logs. It works like a charm.

Cosmopolitan with Grand Marnier®

THIS RECIPE SOUNDS WONDERFUL AS IS; however, I lacked some of the ingredients when I wanted to try it. I used 1 oz fresh squeezed orange juice, tripple sec, grey goose vodka and cranberry pommegranete juice with twists of lemon and lime. Loved the hint of orange flavor and citrus-- and it's not quite so boozie. (:D

Fully Loaded Cauliflower Salad

I brought thi salad when we went camping last year and my extended family, about 20 of us, has requested it again this year. We loved the flavor of the roasted cauliflower! I used lower fat ingredients for the dressing and cheeses, and beefed up the flavor with more green onions, herbs and spices. This recipe is flexible and can be tweaked to your liking.

Fried Cornmeal Mush

Be sure to cook the cornmeal until quite a bit of the moisture has steamed off, When it is cool I slice it about 3/8 inch thich, place it flat side down on a cookie sheet sprayed with Pam, then spray the mush and broil in the oven for approximately 10 minutes, flip it over and broil the other side until it is crispy. My DH likes it with syrup but I prefer butter, salt and pepper. Ultimate comfort food.

Libby's® Pumpkin Cheesecake

Mmm Mmm Good! I served this cheesecake for dessert at Thanksgiving. My family thought they would prefer pumpkin pie until they tasted this cheesecake! It won them over with the first bite. It is the best of both - not too cheese-cakie and better than pumpkin pie. As Rachel Ray would say, "Yum-O"!
