Slow Cooker Taco Soup

Love this especially in cold weather. I don't add water (it's not necessary) and I use fresh jalapenos instead of canned chili's. Freezes well.

Jalapeno Popper Spread

To celebrate the start of the football season my work had a contest to see who could make the best dip. I won! Apparently the big grand prize is a trophy for a year and "bragging rights". My department Director has been talking trash all week about how he was going to win. After I won I loudly bragged about it until he told me to leave early. I used four fresh jalapeno's and one fresh green chili. Took out all seeds and gave them a quick hit in the mini food processor. Mixed them together with the mayo and cream cheese and put in the fridge overnight. Next day covered with a mixture of panko bread crumbs and fresh Parmesan cheese before baking about 30 minutes at 350. People at work kept opening the oven while it was baking so the oven was most likely around 250 - 300 while baking. Served with pieces of thinly sliced Baguette bread. First, but definitely not last, time I will make this. Thank you!

Easy Bok Choy

So easy and so delicious! I only used one clove of garlic - love garlic but one clove was plenty. I took the advice of some of the reviewers and added the stems first and stir fried for about three minutes, added the leaves, cooked for another three minutes and then drizzled some soy sauce on it the last 30 seconds. I inhale this once it's finished!

Grammy's Calamari Salad

Great recipe! I stir fried the squid in a little olive oil for 30 seconds - very tender. Only change I made was I used kalamata olives and added a little finely chopped red onion. Put on a bed of lettuce and it was delicious.

Dried Cherries and Apple Pie

Great pie - everyone loved it! I actually used closer to eight cups of apples and one cup dried cherries; if I had used less apples I believe the cherries would have been overpowering. I also lowered the temp to 350 after ten minutes.

Barbecued Alaskan Salmon

I did use olive oil insead of butter. I also didn't baste the fish but spooned the mixture over the fish while broiling. Very tasty; I will definitely use this recipe again!
