Homemade Taco Seasoning Mix

Wheat Germ Whole-Wheat Buttermilk Pancakes

Wow. These are our new favorite pancakes! Since I only had 1.5 cups of buttermilk, I then used regular milk for the other .5 cup. Worked fine. I also added blueberries to the batter and they were plenty sweet enough for us. Thanks!!!

Rigatoni with Italian Sausage and Broccoli Rabe

Good but a little too simple. Also, the broccolini needs way less than 10 minutes to cook. Ours ended up overcooked. I would also suggest throwing in a bit of half & half to the sauce if you have it, to make it more substantial. Next time I would use a little less pasta, to make more of the sauce. You can also throw in a bit of cornstarch to the sauce & some grated parmesan. I like the idea of the recipe but it didn't have enough flavor as written. We liked it but would make changes next time.

Solid recipe. It needed more flavor, for our tastes. I threw in some red wine toward the end and some tomato paste to thicken the sauce. Good!

Banana Pancakes I

Good. And easy. Once cooked they are not light and fluffy though. They are sort of mushy inside (even though they are totally cooked) because of the ratio of banana to the small amount of flour. If you want to taste and sort of feel the banana, these are perfect for you. I made them exactly as written and we enjoyed them. They arent my personal favorite but this is a cool recipe. Thanks!

Roasted Red Pepper and Potato Soup

Really good! Great recipe. I do think using a hand immersion blender works great for this at the end - makes it smoother. My husband doesnt care for red pepper so I didnt tell him they were in there and he didnt know. He loved this! Also, I do question the timing of putting in the flour. I did it but it immediately got chunky with the vegies. Later, I added a bit of flour with some melted butter (didnt use butter at beginning) and then whisked in some milk. I then poured that into the soup instead of the cream. It was plenty rich doing it this way and next time I will wait to add the flour. Really good idea and great use of jarred peppers (the one I used was from Trader Joes - mixed yellow and red).

Easy Grilled Tri Tip

This is just perfect! I get four small slices of tri tip, use this marinade and then throw on the grill. Easy and very tasty! Fairly healthy too.

Turkey and Quinoa Meatloaf

We LOVE this! I just made it again tonight and it's in our regular rotation. It's great as-is. There are a few things you can play with, if you like. I have added garlic powder, thawed frozen spinach & a small amount of parmesan cheese. Next time I may try adding some diced carrots. You can make small adjustments and it is always fabulous!!!

Chicken with Mushroom Sauce

Fantastic! This was so quick and easy. Used thin slices of chicken breasts (which probably cut down the cooking time). We ate this over some pasta with a little parmesan. Be sure to add garlic!

Hearty Lentil Soup

Excellent. I did need to add more water toward the end, because it was just too thick for my tastes. I prefer to add the carrots with the other vegies at the beginning, so people can consider that option. Either way will work. You can add more vegies too. I threw in half a red pepper that I needed to use up. Really solid, tasty recipe!

Oat Waffles

Good, solid, healthy recipe. I don't think you need as much milk as listed. I used 1.5 cups and thought the batter was borderline too thin. Taste is good. I did add some chopped pecans which made for a fun change, texture-wise.

Whole Wheat, Oatmeal, and Banana Pancakes

Excellent! Made as written except for leaving out powdered milk. Great idea to put oatmeal in blender. Turned out better than other recipes I have tried with oatmeal in the batter. Also, great suggestion from reviewer to use blender for the banana and wet ingredients! Might as well wince it's already out and it makes it quick and easy. Great recipe!

Chocolate Chip Banana Muffins

Very good! Used yogurt and oli like called for, but instead of 1/2 cup oil, used 1/4 and then added 1/4 cut reduced fat sour cream, just to make it a tiny bit healthier. Now, after combining everything, I found the batter too dense. To make it a creamier consistency, I threw in one more egg and some extra sour cream. Then it appeared more like the muffin batters I am used to. I would recommend using MINI chocolate chips just so that the chocolate gets distributed throughout each muffin better. Loved the way those worked here!

Beef Stew II

Good. For personal preference, we added barley, a little more water, sautéed mushrooms and less beef. Would be great as is, and it was great w our small changes just to lighten it a bit. Thank you.
