Easy Swedish Meatball Sauce

I used homemade chicken broth in place of beef stock. I also switched out the cup of cream with 1/2 c half&half and a 1/2c sour cream. It was really good.

Pumpkin Bread IV

OMG These were great. I made a few minor changes replacing 1 cup of oil with apple sauce and only using 1 tsp of nutmeg (that was all I had). I made 2 loaves and a dozen muffins. Cook muffins for 23 minutes at 350.

Cherry Pie

I really loved this pie and so did everyone else. I used my own crust recipe and fresh tart cherries, but the rest was the basically the same. The almond extract is really what makes this special.

Better Than Pumpkin Pie

This was pretty good and a great way to use the other half of a left over butternut squash. Figure about 1.25lbs of squash for a pie. I doubled the recipe and cut the sugar by 25%.

Burger or Hot Dog Buns

The bread didn't rise at all so they were small and dense. My best guess would be that 120 deg. is too hot and after scalding the milk you should let it cool to 105-108. The flavor was great though. I might make this again and brush them with butter and garlic for breadsticks.

Incredibly Cheesy Turkey Meatloaf

I really liked the flavor of this. I did make some minor adjustments 1.5lb ground turkey, 1/4lb cheese, 1 fine chopped shallot, and hand full of chopped fresh mushrooms. Plus added about 1Tbsp of Worcestershire and left out the milk completely. Baked for 50 min and then added ketchup to top and baked 10 more.

Garlic and Herb Lamb

It was good, but I was really looking for a wow factor. I agree with another poster that it doesn't have enough garlic. I doubled it and it could have used more. Also, I used fresh dill and rosemary and bound the rub with a bit of olive oil. Good, but not amazing sad to say.

Creamy Au Gratin Potatoes

This was wonderful! I only made a few small changes. I used red potatoes and added about 1/2 cup grated ham (which I had on hand from another meal) at the same time I added the cheese. Everyone had seconds.

Bonaparte Fondue

I made this for Easter and it was an overall hit, but next time I'll make a few changes. First I'll use only 1/2oz of mushrooms, but keep the soaking water the same. There were just too many bits in the dip. I used an inexpensive Pinot Grigio (Barefoot) since apple cider isn't in season. I couldn't find Bonaparte Cheese anywhere, but the "Cheese Guy" at Whole Foods recommended Auguste Lepetit Brie as a substitute. I will warn you that the brie has a strong sour smell and I thought it was bad, but the "guy" said it was supposed to be one of those stinky cheeses. When I tried a bit before mixing it into the fondu, it was Super yummy. The cheese is so soft though you can't mix it with the wine. I also cut off the rind, but next time I'll probably just leave it on. Finally, I would recommend saving out 1/4 cup of wine and combine that with cornstarch and mixing it in after the cheese is melted to thicken it up.

Green Bean Stir-Fry

Wow. This was really good. I didn't have sesame seeds so I stir fried in sesame oil. No need to boil beans first. Just get the oil really hot and don't be afraid if the beans turn a little black, they are really good.

Mardi Gras King Cake

This was really good and just like I remember from living in NOLA. Next time I will probably add a bit of vanilla to the frosting. I also recommend using the golden raisins for this. Final note: this makes a lot. Easily serves 24+.

Potato and Cauliflower Casserole

This came out really well. The only change I made was to use white cheddar cheese instead of swiss. Served it with pork steak. Next time I may just cube the steak and mix it into the casserole.

Just excellent. I will say that the second time I made it I mixed the sugar mix with the apples and then put it in the pie. I reserved just a bit of this mix to brush on the top.

Green Bell Peppers stuffed with Tomato Lentil Couscous

I loved this, but did make some changes. I used 1lb of lamb, 3/4 cup onion, 3 cloves garlic, and 2 tops of bell pepper diced. I didn't add in extra onion. It was so good and the perfect amount of stuffing for 5 peppers. Also I used Ragu Chunky Roasted Red Pepper and Onion sauce. I did boil pepper shells 5 minutes prior to stuffing so they would be softer and I didn't have any cheddar so I left that off. I cooked covered for 20 minutes and then turned on broiler. Added parm cheese to top and toasted 3 minutes until melted/bubbly. Yummy. My husband loved it! I will be making this again soon.
