Baked Potato Soup I

love this recipe! I've been using it for years! The only thing I do differently is I add a tablespoon or so of Tone's chicken base, and I don't peel the potatoes. I pretty much do all the ingredients to taste, but this is a super soup starter! oh, and I use the same for the bacon as I do the soup....get all that yummy goodness from the bottom!

Restaurant-Style Zuppa Toscana

this is very close to the real thing! I make it all the time with a couple of changes. First of all, I hardly ever use more than one pot when I make a soup, and this one is no exception. I also like to squeeze the meat out the sausage links...it cooks so much faster. I use turkey sausage, so I have to add a small amount of olive oil to the pot when I do this. Remove the sausage from the pot then I cook my bacon, turkey bacon, which I have already cut into small pieces. then add the onion to the pot, cook till tender, then the garlic. Then I add everything except the kale and heavy cream. When the potatoes are about half done, I add the kale, and let that cook till it is just tender. Then I had half and half and a few shakes of some red pepper flakes. Simmer till it's all heated though. Love this!

Chicken Jambalaya I

this was very good. I've made it twice, once just as it is written, and another time, I used dried basil instead of thyme. I liked it with the basil (more of an italian flavor), but my husband preferred it with the thyme ( more cajun style). Either way, it's a great recipe that can be tweeked for something different depending what you are in the mood for.

Meatball Appetizers

these turned out well, but I had to make an adjustment. I used the "marinade" ingredients to make a sauce, thickened with cornstarch. Next time, I will not bother with marinading them,but instead, use the marinade ingredients (with out the water) in the meatballs as well. I quadrupled the recipe, 2lbs of ground beef, which made a lot of meatballs, but there were only a few left over.

Ranch Dressing II

My friends and family constantly ask me to make "my" dressing. the only change I've ever made was to substitute nonfat greek yogurt for the sour cream, because I am trying to cut down on calories. It is just as good. I hardly ever measure anything anymore, just eyeball it, as I've been making it for over 10years! Best ranch recipe ever!

Kalua Pig in a Slow Cooker

I have made this recipe several times and it always turns out great. It brings me back to the seven years that I lived there. Just like the kalua pig we used to get at luaus.
