Chex® Muddy Buddies®

SUPER TASTY!! I was tired of all the cookies so, I decided to try a different sweet snack and I found the perfect one. Needless to say, I made two batches of this. One for me (I followed the instructions - almost exactly) and One for my husband who cannot eat chocolate. For his, instead of semi-sweet chocolate chips, I used Vanilla Chips. I hate to say, it but, I almost like the Vanilla Chip/Peanut butter combo better. Once the cereal was mixed w/ the chips/peanut butter/vanilla and butter, I threw the mix into a large ziploc bag and dumped the powdersugar in it. I then sealed the bag and shook til mixed. I then dumped the extra sugar out (used a big strainer) it may be extra work but, was worth it. These treats were yummy - who is to say you can bag them and give them as holiday gifts (Reindeer dropping or Snowman poop anyone?)

Curtido (El Salvadoran Cabbage Salad)

I made this specifically for Pupusas. Alone, I am not a big fan but, pair it with pupusas and it is awesome. I followed the directions as written (here is the but...) but, doubled the recipe. My husband thought it tasted better than the stuff we got at the El Salvadoran restaurant.

Pupusas de Queso (Cheese-Stuffed Tortillas)

I used this recipe as a basis for my pupusas. I found I needed more water than the 1 cup required. I added about 1/3 cup more. I ended up filling my pupusas with black beans and queso fresca. They were really good. Something I would like to try again. I think it would make a great breakfast food w/ an egg on top?

EXCELLENT! I really like to find deserts that are dairy free and tasty. I made this for my LI husband and he ate every last crumb. This quick and easy desert is a must!

Cake Balls

As a recipe that has been around longer than Starbucks has had their Cake Pop's, this is obviously a hit-it-out-of-the-ball-park dessert. I used this recipe as a starting point for my cake pops. I decided to make Chocolate Mint ones. I used 1/2 chocolate cake & 1/2 tub chocolate frosting. I mixed peppermint extract in w/ the frosting (just enough to please the taste buds). When it was ready for dipping, i used melted Andes Mint Chips. Theses mint ones were amazing. With the second 1/2 of the cake and frosting I did peanut butter/chocolate. the balls were completely chocolate. For the dip I melted 1/2 milk chocolate chips with 1/2 peanutbutter chips. these too were devine.

Chocolate Caramel Candy

I prefer to give these a 4 1/2 but, that is not an option. I have made these several years in a row now because they are that good. the reason I didn't give them a 5 is because of either the nougat filling or the caramel layer. If these get even slightly warm, the start to ooze. this year when i make them I might have to dip the whole squre into chocolate to keep them more stable. As for taste - these are amazing and do taste like fresh made snickers bars.
