Home-Fried Potatoes

Everyone loved these at our Christmas brunch this year. Very easy recipe - boiled the potatoes the night before, then popped them in the fridge. Chopped them up right before frying. Yummy!

Make Ahead French Toast

YUM-O! I made this for our Christmas brunch, and it was by far the favorite dish! Guests were talking about it several days later!!! I did make some adjustments: I used the whole loaf of French bread, instead of half - all of the other ingredients remained the same EXCEPT that I added cinnamon to the egg bath and sprinkled a little more on the bread prior to baking. I did use two 9x13 pans for the whole loaf, and then I poured the remaining egg mixture evenly over each pan after I had dunked and laid out my bread. In the morning prior to baking, I flipped the bread, baked for 20 minutes, flipped the bread again, added the pecan/maple syrup topping, and baked for the final 20 minutes. DELICIOUS!

WOW - Just had this and it is DELICOUS! You definitely want to (at least) double the gravy so you have plenty to pour over your potatoes

Janet's Famous Banana Nut Bread

I would give this a 5+, but since I changed it (slightly), I figured I'd hold back one star. I only used 2 cups of sugar, and that was PLENTY - even with my sweet tooth :) I also added a tsp of vanilla. This was FANTASTIC! Super easy and delicious. I ended up with 4 mini loaves and one 5x9 loaf.

The Best Meatloaf I've Ever Made

This is a VERY good meatloaf recipe - stayed very moist and was not too dense - I was a little concerned about that with all of the ingredients, but very well balanced. This one is definitely one to try. EDIT: Wow - you know how dry and icky meatloaf gets when you reheat the leftovers - NO PROBLEMS WITH THIS ONE! After having it for lunch, it almost makes me want to make it, then throw it in the fridge just for the leftovers! Even better than just cooked!!!

Roasted Garlic

The temperature and time are way off - in fact, way, way off - Read all of the reviews - 90% have bumped up the temp considerably and/or roasted for A LOT longer than 20 minutes... Maybe the 20 minutes is just for method 2 since the cloves are separated. Anyhow, I didn't mind waiting longer since I had a lot of other prep work to do - HOWEVER - even with my SMALL head of garlic, after 1h20min @ 250 I still had fairly firm cloves - bumped up the temp to 350, and took it out 10 minutes later to use bc I was tired of waiting.

Swanson® Ultimate Mashed Potatoes

These were excellent mashed potatoes - I will never make mashed potatoes with just water again! We had these with our Easter dinner tonight, and I got rave reviews - I did omit the bacon (had a guest who is absolutely anti-bacon), but I'm looking forward to making this again so I can see how yummy these are with bacon!

Honey Glazed Ham

We just had this for Easter dinner, and it was excellent! Everyone loved it. I followed a few other reviewers suggestions - made the glaze with 1/4c honey, 1/4 c pineapple juice, 1/2 c packed brown sugar, 2T butter, and 1/4t ground cloves. We basted every 20 minutes until the ham was done (based on the directions that came with my ham). When it was done, I sprinkled maybe another 1 or 2 T of brown sugar over the ham and threw it under the broiler for 2 minutes. The pineapple juice kept it thin enough so we had a nice pan of drippings that was fabulous to serve with the ham. Thanks for a great base recipe and for all of the fabulous suggestions in the reviews!

Super Easy Chicken Noodle Soup

Very yummy - used rotisserie chix broth instead of boullion, 2 cans crm of mushroom, added onion, garlic, carrots, celery, and a bit of parsley. Great base recipe!

Hot Chocolate Mix II

This cocoa is fabulous! I made it for our very large extended family for Christmas this year, and I think it's great. Only gave it 4 stars because I think it is a bit on the sweet side, but I like it that way :) Just a few notes: I followed previous reviewers suggestions, adding the package of pudding mix and 1 tsp of salt. Due to the size of our family, I doubled the recipe, so if you need a whole bunch, here is what I did: I used one (30 ounce) container of the chocolate drink mix. The powdered milk packages didn't correlate to the measurements listed in the recipe, so I did a little math and figured out that out of my 64-ounce box of powdered milk, I needed to remove 5 1/3 cups in order to be left with the 51 1/4 ounces of powder that I needed for my doubled recipe. Doubled, this recipe yields approximately 21 cups of cocoa, so can make quite a few nice gifts for extended family/friends/neighbors. I would also definitely recommend blending or processing this mix so that it is more uniform in both mixture as well as texture; if you use a flavored creamer, I would opt for the sugar-free variety, as I think this may be where some of my super-sweetness came from. And, finally, 4T of mix are a must for hot water; however, if you use milk, 3T is just perfect! Whew - that's all I have to say!
