Jamie's Cranberry Spinach Salad

I made this to take to a dinner party. I halved the oil and it was still a sopping mess in the over a pound of spinach I tossed it in. I had to take paper towels and try to leach off some of the oil, and then put it in a strainer to attempt to further reduce the oil. I could not take it to the party.

African Chicken Stew

I doubled the seasonings, and double the garlic and added ginger and added a carrot and two salks of celery. I also replaced the potato with a sweet potato. I also added a can of diced tomatoes and used a tad less natural peanut butter. I added cilantro a garnish. We really enjoyed it over brown rice. I would note however that prep time listed is WAAAAYYYY to low for deboning a chicken..

Chicken and Apple Curry

I used coconut milk rather than milk, and added a few more spices. I also doubled the amount of curry. I thought the dish was fine, but my boyfriend said he probably would not like for me to make it again. He said it was fine, but with so many great recipes out there, why bother to repeat average?

Zesty White Wine Green Beans

These were excellent. I served it with a basil chicken and it was very good. I followed the recipe with the exception of fresh green beans and I squeezed a quarter of fresh lemon on the finished product. Yum!

Chicken In Basil Cream

Wow! This recipe was really something! I used egg instead of milk and also pounded the chicken flat. I sauteed a clove of garlic with the butter before adding the chicken. I also doubled the sauce recipe and added a clove of garlic to the sauce as well. The only other change I made was adding some white wine to the sauce and also about four white mushrooms sliced. I think they were positive additions. My boyfriend LOVED this and took the leftovers to work for lunch. He has never done that before. This recipe was restaurant quality. I served it over fresh egg noodles and with a side of green beans using the "zesty white wine green bean" recipe on this sight. ENJOY!!!

Asian Salad

I thought this salad was delicious and all the flavors really complimented each other. I gave it a 4 because my boyfriend thought the salad was very good but that the noodles on top were bland.

These were good and the sauce was delicious, but our broiler was HOT! I only had them in for a minute but that was too long and there was no snap left in the peas!

My boyfriend and I loved this soup! The only problem I had was I addded extra coconut milk (per suggestions) but not enough chicken broth. It became rather thick, so it was less a soup. It was so delicious though!

Easy Chicken Satay

This peanut sauce was delicious! I made extra and saved it. A few days later I sauteed some tofu in oil green onions. Then I added this sauce and tossed some sesame seeds and coconut on top. It was fantastic!

Amazing Simple Thai Tofu

I subbed out the olive oil and used peanut oil. I also made a peanut sauce out of peanut butter, rice vinegar, yellow curry, garlic and ginger for a previous meal. It all came together nicely. Serve it hot!

Pad Thai

This turned out wonderfully! I was a little skeptical at first when I made the sauce. I have never made Pad Thai before but the sauce just didn't seem right. I also doubled it as suggested and added a lot more crushed red pepper. I don't think the recipe calls for enough. I also added garlic. I used tofu and shrimp. Delicious!

Guinness® Corned Beef

This was very good. I followed the directions but I reduced the amount of meat to 1 1/2 pounds. I added a clove of garlic and a bay leave to the Guiness. I cooked the meat in the beer and turned it in the oven every hour. I also agree with other commenters that the fat should stay on and the amount of time cooking needs to be increased. I cooked mine for 6 hours but it could have cooked longer. My boyfriend loved it and preferred it over the boiled kind. As did I!

Red Lentil Curry

This was delicious! I took the advice of another reviewer and used the Muir Glen Fire Roasted Tomatoes, they were perfect. My only complaint was I felt the portion size was off. I felt it served less than the number stated.

This recipe was good. I would make it again, however I think it needed some changes. For example another reviewer said to use fresh spinach and I really think that's essential. Also, it could have used curry paste as well as the powder. I felt the recipe made a lot, way more than the number it was intended to serve. I froze the leftovers for my boyfriend to eat when I'm out of town!

Curried Chicken Rice Soup

This was a great recipe to use up the rest of a roasted chicken. This recipe makes a huge amount so I halved it and still had a lot left over. I would add more veggies next time. I also added chick peas towards the end. Also, I used about 4 times the amount of currie required per the recipe.
