Mama's Potato Salad

DELICIOUS!! I used about 1/2 red potatoes (I don't bother pealing potatoes when I cook with them... adds color and texture!) and 1/2 turnips in the pot to boil; both chopped the same size. I also omitted the mustard, horsey sauce and the dill pickles, subbing a 1/4 c (or so -- eye-balled it!) of relish... and added dried rosemary at the same time as the onions (so marry the flavors...) This recipe is a great recipe to play with! I'm sure I'll make it differently next time - I'm an experimental cook ;-) It's in the fridge now, but my MIL, DH and hubby's uncle all tasted it and said it was great! There's a container of potato salad in the fridge from the grocery store.... may be taking that back (bc it's full of HFCS and preservatives -- yuck-o!) If it's anything less than rave reviews: I'll update here... I'm assuming the flavors will only get much better in the fridge!!

Easy Chicken Rice Casserole

I just threw this together loosely based on this recipe: I used a rotisserie chicken (not quite all of it - two legs and about 1.5 of the breast meat), a can of cream of chicken and a can of cream of broccoli (would have used mushroom if I had any!), and five-minute-rice and reduced the cooking time to 30 minutes! ... will edit review once the family has tasted it! =-D

Chocolatey Peanut Pretzel Bars

I used butter, 2 1/4 c flour, and cashews, so ours are a LITTLE bit different, but DELICIOUS!!! Thanks!! Great recipe - It's in my RB!!

Pumpkin-Oatmeal Raisin Cookies

I followed the previous reviewer's suggestion to make these into bars (THANK YOU!) and then added cream cheese frosting after they cooled for a 'girls' night' get-together! DELICIOUS! ;-D

Corn Dog Muffins

This was GREAT!! My kids (5 and 6 years old!) LOVED these! I DID make a couple teeny changes: Instead of the shredded cheese - I took the hot dogs and slit them and put American cheese (cut into 1/4" slices) into the length of the dog, then sliced the hot dog (with cheese) into bite-sized cuts and submerged three pieces into each muffin. I also pureed about 5 baby carrots and mixed that into the mixture.... Kids'll never know they're eating VEGETABLES?! ;-) I think next time I'll add yellow squash AND carrots! (the green veggies are pushing it when it comes to sneaking them! - too noticeable!) Thanks for the idea - great for school lunches and my picky 5 year old is asking for more!

Squash Casserole

Loved it!! I didn't have any bread crumbs in the house and decided to make a box of Jiffy corn muffins instead!! Worked out perfectly! All six muffins, crumbled made the 3 cups of bread crumbs I needed... of course, it was lacking the seasoned flavor of PF stuffing, so I added some random Italian seasonings.... eye-balled it, so I can't really tell you what or how much I put in there... sorry! I used one zucchini, one yellow summer squash, one "8-Ball" zucchini squash and one yellow zucchini; two chopped leaks and two large carrots. I also chose to not mix the cheese into the mix, but sprinkled it on top of the casserole and then the reserved muffin crumbs on top of the cheese! Yuummmmy!!! I'm going back for seconds!! ;-)

Chicken Tetrazzini II

I am a chronic "recipe changer"(?)!!! I added basil and peas to the cheese sauce when I was bringing it to a boil and my kids ATE IT UP! (4.5, 3.5, and almost 2 years old...) Husband isn't home yet, but I'm sure he'll enjoy it, too!! Yummy!! Thanks!
