Jalapeno Chicken

Whole family loved it. Used chicken breasts instead of the whole chicken and served with warm corn tortillas.

Abby's Chicken Rollatini

I followed the recipe as written, however, I did substitute thinkly sliced ham in place of proscuitto. While there were no complaints from the family, overall I thought the recipe was rather bland. However, I'm rating this a four not for the flavor of the recipe itself as much as for the inspiration it's given me to try different rollatini. A good chicken dish, especially for families with picky eaters. Will try again, but next time will experiement more with the stuffings and spices.

The Best Meatballs You'll Ever Have

Best Marinara Sauce Yet

Wow, really disappointing. While the sauce was very edible, I'd have to say that it wasn't even as good as most store bought jars. I made 2 changes, however, I don't believe they would change this from a 3 star to a 5 star recipe. The changes I made were to use 1 Tbsp of dried parsely instead of fresh and to use 5 Tbsp of olive oil instead of 6. I've made a better sauce and will post the recipe at a later date. I personally like more garlic, a little basil and usually add a little brown sugar.

Wonderful flavor that the whole family enjoyed including our pickiest (burger, pizza) eater. 5 stars are only given to those dishes which are truly amazing. Having said that I will be making this again. The only changes I made was to use 3 lbs of pork, and to include 1 red pepper, mushrooms and 2 yellow squash. Served with roasted potatoes and garlic green beans (recipes on this site).

Joe's Fusion Chicken Pad Thai

Everyone but one kid loves this however I still have not gotten the noodles done perfectly. This is not authentic, but as the title says a Fusion. I've tried other Pad Thai recipes and this is the one the rest of the family likes the most. I'll keep trying this and new ones.

Super-Delicious Zuppa Toscana

Awesome, easy and filling! Is on our regular winter menu. I cook the sausage and bacon separately and drain so that the soup has less grease and stays a creamy color.

Amazing White Clam Sauce

Great recipe and easy to make! Whole family enjoyed it. NOTE: At some point recipe was modified from 2 Tbsp or red pepper to a pinch of red pepper. Most reviewers recommended between 1 and 2 tsp. I did follow another reviewer's suggestion and used shallots instead of onions and used 4 cans of clams (2 chopped, 2 minced).

Sour Cream Mushroom Chicken

The only change I made to the recipe was to use light sour cream. It was fair and on the bland side. I think 2 cups of sour cream might be a bit much. I was hoping for more of a stroganoff flavor. While everyone in the family ate the dish, most were in agreement that it was just okay.
