Baingan Bharta (Eggplant Curry)

Awesome! Of course, I failed to follow the instructions as written, but loved the result. I sliced the eggplant and cooked it in a dry non-stick skillet until it was thoroughly browned, almost burned in spots. I followed the rest of the recipe as written, and added the cooked onion and spice mixture to the eggplant, and left it on low for a few more minutes. Can't wait to make this again.

Oatmeal Bread III

I made a loaf a few days ago, with a few changes because of soy allergy. I subbed almond milk for soy, xanthan gum for lecithin, and garbanzo bean flour for soy flour. Some had complained of crumbly bread, so I added a tablespoon of ground flax with 2 T. water. The batter was quite wet, but I went ahead with it. On second thought, I would add a little more flour for a drier batter. I thought the loaf was done after 40 minutes since it was brown and a toothpick came out clean, but definitely should have left it in longer. I let it cool, put it in the fridge, and started slicing it the next day. It has a fabulous taste, but I find the bread to be a little too dense. However, I'm going to try this again since I made some errors, and work on making a less dense loaf, because the taste is worth it. The tiny bit of cinnamon and a flavorful local honey make it a real pleasure to eat.

Cabbage Soup II

I made this soup tonight and it was a hit, even with picky non-cabbage eaters. I used homemade chicken stock in place of the broth, and put hot sauce on the table for those who wanted it. If I made it again, I might put in a whole cup of barley, but that's the only change I would make.

Spinach, Red Lentil, and Bean Curry

I made this recipe exactly as written, and was really disappointed in how bland it was. Adding curry powder and some salt didn't help much. I think the seasoning was overpowered by the quantity of beans.

Power Cookies

I thought these cookies were easy to make, really healthy and did not taste beany in any way. The only changes I made were to add a tablespoon of molasses, a tablespoon of honey and I substituted craisins for the raisins. I got 3 dozen medium sized cookies from the recipe. I will definitely be making this recipe again since I'm always on the hunt for wheat-free cookie recipes.
