Spinach and Feta Pita Bake
This recipe convinced my husband that he did, indeed, like feta cheese. We have it frequently and it always goes fast. This time of year I substitute Malabar spinach for the regular spinach because I grow it and it's quite a prolific vegetable. It adds a bit of a bite that I enjoy and works well with the feta.

Welsh Cookies
I first tasted these on a trip to Wales and just had to have a recipe. It took me a little while to find it because the vendor who sold me them called them Welsh cakes. (What we call cookies are usually cakes or biscuits in GB) The first time I made them I followed the recipe exactly and they tasted just like I remembered them. Now I usually use raisins because I have them on hand but don't keep currants in the cabinet. I always make a double batch because my husband eats them a fast as I can take them off the griddle!

Stuffed Bell Peppers
Even my carnivore husband loves this recipe. For those asking about TVP, it's called "crumbles" by both Boca (c) and Morningstar Farms (c). I've been switching out ground beef for TVP for a while, and it was nice to see a recipe already using it. I used brown rice instead of white and sometimes I use my own marinara.
