Honey Baked Chicken II

This has become a regular dinner menu item at our house. I've made it a couple of times now and really find that it calls for too much butter. I've cut it in half it thought that it was still too much butter, so I will only be using 2TBS next time. But the sauce under the butter is so delicious. My 4 & 2yr old love this chicken.

Vegan Apple Carrot Muffins

LOVE this recipe. My kids have egg allergies and its great to find a delicious recipe that is also good for them. I substitute 1c whole wheat flour, added some ground flax seed and some wheat bran. But these rise quite nice and are super moist compared to my failed attempts at baking egg free.

Roasted Beets 'n' Sweets

LOVE IT! All 3 of my children (4yr, 2yr and 1yr old) ate it and had seconds. I added 4 cloves of fresh garlic b/c my husband and son love them. But the beets were delicious. I didn't think I liked them but tried this b/c I had some and really enjoyed them in this dish.

Balsamic Vinegar and Olive Oil Dressing

Great dressing and easy to make with things I already had. I made a smaller amount but used the same propotions. It had a little too much oil for my liking but that was an easy fix to add more vinegar. I didn't have fresh oregano so I used the dried, but my husband loved it. I also used white balsamic

Feta Chicken

Great and easy way to make a boring dinner a little more exciting. I made a couple of very small changes: I dipped both sides of the chicken in bread crumbs and then put the feta in. I added spinach b/c I had a lot to use up. My husband was so impressed with how quickly I made dinner and how wonderful it was. Will be making this again.

Blue Cheese Chicken Wing Dip

Awesome dip with a few changes. I, like other readers, left out the butter and never missed it. I also cut back and use half of the hot sauce and blue cheese. I also just put everything in a crock pot and mixed together. It is always a favorite everywhere I take it. We use colored peppers to dip in it to make it a little more healthy. But if you are going to use chips get Fritos not just corn chips there is a big difference with this dip.

Brunch Enchiladas

I made these for breakfast at church. I added some store bought hashbrowns. They were ok, next time I will skip the potatoes. They made the enchiladas a little dry. But everyone loved the new take on a breakfast casserole.

Baked Potato Soup

Great easy soup. I made this for a party and everyone loved it. I baked the potatoes a day ahead of time and put it all together the day of the party. I did add celery to the onion. But other than that I stuck with the recipe.
