Garlic Alfredo Tilapia

What a great alternative to the same boring fish recipes! This recipe has quickly become a favorite in my home. I use cajun seasoning over the tilapia and by suggestion from another user, Cassico light alfredo from the grocer. I've made rice as a side as well as pasta. This a a recipe your family will love!

Rich and Creamy Tomato Basil Soup

I loved the idea of a creamy tomato soup at home that is similar to my fave luncheon hot spot, wthout the price! Your recipe was a great start for me, but I wasn't able to make it to the grocer for fresh tomatos and wanted to make it a bit healthier. I'm certain the recipe is wonderful as-is, but I deviated quite a bit: I used a large (dbl) can of diced tomato, 1 can of tomato soup. I cooked on med-low for 30 min, then pureed in the blender. I then returned to pan and whipped in 1/2 c of whipping cream, 1/4 c of 2% milk, 1/4 tsp of basil, 1/4 tsp of minced garlic, and a dash of crushed red pepper. I cooked it for about 30 more mins. on med-low. It served the 3 of us well and my boyfriend excitedly took the leftovers to work the next day. He wants to know when I'll be making it again!

Easy Baked Tilapia

This is a WEEKLY staple in our home! It's the Easiest and Healhiest fish I have ever made that my family LOVES. I once forgot the lemon slices and my son was quickly disappointed! I don't deviate much from the recipe, it's easy! I go light on the butter and have switched up my veggie choices. I've added many different frozen selections from my local grocers freezer to "change" our healthy meal. I've even added fresh veggies half-way into our baking time. Thank you for this wonderful, healthy meal!

Grilled Pineapple

For the marinade, I replaced the hot sauce with cayenne pepper. I used chunked pineapple from a can because it was all I had at the time. I was only able to marinade for about 45 mins, then placed chunks on skewers and grilled on each side for 3-4 mins. It was a GREAT side dish to grilled chipotle marinaded pork loin. I will definately be making this dish again, maybe next time with fresh pineapple.

Sweet Salsa and Cinnamon Chips

I used another reviewers advice and added peaches to the recipe. I made the cinnamon chips but also purchased a box of graham cracker sticks for my son to dip. Yum!

Amazing Pork Tenderloin in the Slow Cooker

I've made this dish several times and it's a favorite in my house. I follow another reviewer's advice and pierce the meat several times thenn place slivers of garlic in the slits. This also alows the sauce to marinade in the tenderloin. Don't throw out the sauce, serve with mashed potatos! This recipe never has leftovers in my home!

Pineapple Casserole II

I made this as a side dish to bbq last night for my boyfriend's birthday dinner, he loved it and picked up right away on the "odd mix of ingredients". I followed the advice of other reviews and cut the sugar in half. Also, I'd use half of the butter when I make again for the crumb topping.

Tangy Grilled Pork Tenderloin

I made this last night for my boyfriend and he loved it! I added minced garlic to the recipe but only had about three hours to let the tenderloin marinade. I placed it on the top rack of the grill for about 30 mins. Yummy! I'll definately make it again.
