English Muffin Breakfast Strata
I recently made this recipe for my family to eat on Christmas morning. I prepared the recipe the night before following the instructions closely. I used approximately 8 english muffins, cutting a few to cover the bottom completey. I also used Bob Evan's Savory Sage sausage, a favorite breakfast sausage in my home. Wow! What a hit this was! Our 6 year old loved it, and my teenage son even took leftovers to go to his girlfriend's home. Will definately make again.

Downeast Maine Pumpkin Bread
This was my first time making pumpkin bread and it turned out fantastic! I ammended the recipe accoeding to another reviewers advice as follows: 15 Oz Can Pumpkin; 4 Eggs; 1/2 Cup Veg. Oil; 1/2 Cup Applesauce (I used sweetened); 2 Cups Sugar; 3 1/2 Cups Flour; 2 Tsp. Baking Soda; 1 1/2 Tsp Salt; 1 Tsp. Cinnamon; Splash of Vanilla; 1/4 Tsp Pumpkin Spice; 1 Tsp Nutmeg; 1/2 Tsp Cloves; 1/4 Tsp Ground Ginger; Blended and cooked as described in original recipe. I seperated the batter into mini-loaf pans and I used 1/4 cup chopped walnuts in each of two of the loaves and 1/4 cup chocolate chips in each of the remaining two. My friends and family loved both flavors! Will definately be making again for the holidays.

Sauteed Apples
Just made this mornng as a topper for a simple mashed microwave banana/egg pancake. I halved the recipe for two of us; and like other suggestions I used less butter and softened the apples with water and added vanilla to the sugar mixture at the end. Will definately make again!
