Mama's Italian Wedding Soup

This is how I make my wedding soup with one change. I do not add pasta I make cheese croutons. 1 dozen eggs, 2 1/2 cups Parmesan cheese, 1 1/2 cups Italian bread crumbs. Beat eggs and then add cheese and bread crumbs. Add just enough milk so that it looks like a cake batter. Grease a cookie sheet and spread the mixture evenly. Bake 350 degrees for 25-30 minutes until the bottom is slightly brown. Cool and cut into small cubes. Add to soup when you serve it. Yummy!

German Apple Cake I

Very moist and good. Easy to make. I am making it again today. I do use more apples than called for, only 3/4 cup of oil and 1 1/2 cups white sugar. I also bake it in a bundt pan and dust with powdered sugar.

Grilled Lemon Herb Pork Chops

Outstanding!!!!!! Used fresh rosemary instead of oregano & no salt. Marinated for 24 hrs and cook on the grill. I'm going to try the marinate with boneless chicken breasts also.

Spanish Rice II

This was my first attempt at making Spanish Rice and it came out very good. I used some of Jodie Lynn's suggestions and used chicken broth and added two cloves of garlic. I also used a whole bell pepper and instead of diced tomatoes with green chiles I used Ro-tel diced tomatoes with lime juice & cilantro. I also added a heaping teaspoon of cumin because I love the spice. I will be making this again.

Awesome Pasta Salad

I'm a little late in reviewing this but I made this in July for 20 people at work. Everyone loved it! It is Dec. and they are still talking about how awesome it was. I'm sure I will be making it again for them. I did use robust italian dressing. Poured half of the dressing over the salad at home and when it was time to eat added the rest of the dressing. And I did use more dressing than the recipe calls for. Very good.

Cranberry-Pineapple Minis

The first time I made this I used pineapple tidbits by mistake. It was very good. The second time I made it I used crushed pineapple like the recipe calls for and it wasn't very good. It went in the trash. Using tidbits made all the difference.

Lemon Cooler Cream Cake

If you love lemon this cake is for you. I made it for the first time for my co-workers today and it was a big hit. I used 1/2 cup hot water and 1/2 cup cold water. I also used a straw to poke holes in the cake. I mixed the milk, lemon gelatin and lemon pudding in a bowl and refrigerated until i was ready to serve at work, then I folded in the whipped topping and spread it over the cake. So light and refreshing.

Crispy Rosemary Chicken and Fries

Excellent. The only changes I made was to sprinkle lemon juice over chicken and I used fresh garlic. Fresh rosemary is a must. The potatoes where very good and crispy.

Banana Sour Cream Bread

Baked it this morning. The best ever!!!!!! The only thing I did different is halve the recipe. Cut the sugar down 1/4 cup and sprinkled the sugar cinnamon mixture on the inside on the pan and on the top of the loaf. Yummy!

Roast Chicken with Rosemary

This is the best chicken recipe I have ever made. It is full of flavor and very moist. I use to make it with a whole chicken but now I use whole chicken breasts with skin. I place 1/4 of an onion under the chicken breast in a roasting pan. I then mix 1/4 cup of lite butter, 1/2 tsp of minced garlic and a splash of lemon juice together. This is enough for two breasts. I then place the butter mixture under the skin of the chicken breast with a sprig of fresh rosemary. Sprinkle the breast with pepper, pour about 1 cup or so of white wine in the roaster and bake covered at 350 for about 1 hr. After removing the chicken breast from the roasting pan I then add parsley to the wine, thicken it with flour and water and serve it over rice. It is soooooooo good. It is good with the whole chicken also but with the breasts I can make it on a work night.

Crustless Spinach Quiche

This recipe is the best. I have used many recipes from allrecipes and this is my first review. I am a breakfast person. I love eggs, potatoes, bacon, everything that has to do with breakfast. I am trying to eat healthy and so I made the quiche as written only I used 2 cups fat free sharp cheddar, 1 cup regular sharp cheddar and egg beaters. The quiche was yummy. I even tried it in the microwave the next day and it was just as yummy Pat
