About this Cook
I cook GF and healthy for the most part. I love having home cooked meals with my hubby and when I'm entertaining. I love to eat and haven't always enjoyed cooking, but since we left the west coast and I have more time, I've enjoyed experimenting with new recipes. I used to fear cooking fish and am now finding it's actually pretty easy.
My favorite things to cook
Lately I'm enjoying more fish and vegan recipes. For the past year I've been cooking gluten free, as I have discovered I have a gluten allergy. Otherwise, my favorite dish is lemon chicken piccata served with wild grain rice, sauteed zucchini, and a wild green salad, with a glass of pinot, of course. YUMMEEZ!
My cooking triumphs
I'm having more and more triumphs these days. I've done well with converting to gluten free and am excited my husband is digging it, too. My favorites are anything mexican that includes guacamole, chicken piccata, chicken noodle soup, and my very tasty GF meat lasagna.

Fish Tacos
I used tilapia instead of cod and modified this recipe to be gluten free and both my husband and I thought the tacos were delicious. I used Red Mill GF flour, Green's GF beer, and ALL corn tortillas. I served with purple cabbage and sliced avocados to add a little more texture. I don't like too spicey, so I cut all the spicey ingredients in half and the white sauce had just enough spice to satisfy. I also don't have a deep fryer, so I just heated up some oil in a pan and cooked the fish about 2-3 minutes on each side and it turned out great. Sometimes GF flour doesn't fry or cook as well as regular flour, but it was suitable for this recipe. Yummeez!

Ginger Glazed Mahi Mahi
Can you say, delicious! I prepared this as indicated and wouldn't change a thing. I served the mahi mahi over a portion of quinoa. The quinoa soaked up the glaze nicely and made for a tasty texture with the fish. Enjoy!

World's Best Lasagna
My husband loved it and I agree that the sauce is what made it delicious. I would recommend using shredded mozzarella ....or make sure you use REALLY THIN slices of mozzarella cheese. You will love this recipe.
